Watermelon and Tomato Salad

This salad is fabulous. I've made it twice now. Its such a nice change from the ordinary and great for dinner parties etc because it seems to be such an unlikely pairing yet is so tasty and unique. Chocked full of lycopene too and very easy to make. Make sure you use very good quality balsamic, it really does make a diffence. You can also try it with some of the flavoured balsamic vinegars, such as fig.

Mashed Sweet Potatoes and Pears

Very, very tasty and I didn't even have white wine...just used water. It almost had a caramel type taste from the pears. I only used 1/8 c. sugar and 1 tbsp. butter in an attempt to keep the calories down. It really didn't need any more. My only complaint is that it was too watery despite the fact that I drained the pears and let the sweet potato dry out a little in the pot. I only added about 1/3 c. of the evaporated milk. My pears were quite ripe...maybe that's why? Ended up putting it in the oven for a while to try to dry it out a bit.

Sweet Potato Cranberry Bake

Loved it! The combination of sweet and tart is really tasty. I also added chunks of acorn squash, used OJ concentrate, cut back on the butter and sugar (used brown demerara sugar - gives it a bit of a crunch), fresh cranberries and steel cut oats in place of the nuts (nut allergy in the family). It felt so good to be eating something so healthy and tasty at the same time! I imagine its even all that much better with the nuts. Will definitely make it again.

Greek Lemon Chicken Soup

Excellent fresh taste. Love the lemon. I used homemade turkey broth and turkey (leftover from Thanksgiving). Didn't add the soup base (too many nasty ingredients in those), used orzo instead of rice, added a touch of oregano and lots of fresh spinach. I only used 6 egg yolks and omitted the flour and butter and it was plenty thick and rich enough and much more healthy! Whole family loved it.

Creamy Butternut Squash With Cinnamon Soup

I've made a lot of soups in the past but this one is definitely one of the best. I followed it pretty much to the letter except I used 2% evaporated milk in place of the 1/2 and 1/2. Its also very important to use high quality chicken broth.

Seashell Supper

Great, simple and nutritious (especially if you choose your bacon carefully!). I didn't add the 2.5 cups water...found it unnecessary. I added a can of drained kidney beans for flavour and to boost the nutritional value. It was yummy...the kids loved it.
