Garbanzo Bean Chocolate Cake (Gluten Free!)
I'm not sure what happened but mine was very dry. I omitted the added sugar as my chocolate had some sugar in it. I did add a couple of sachets of stevia. Everything else was the same. Taste was good but wasn't nearly as moist as I was expecting based on other reviews. I'm not sure why leaving the added sugar out would reduce moistness?

Watermelon and Tomato Salad
This salad is fabulous. I've made it twice now. Its such a nice change from the ordinary and great for dinner parties etc because it seems to be such an unlikely pairing yet is so tasty and unique. Chocked full of lycopene too and very easy to make. Make sure you use very good quality balsamic, it really does make a diffence. You can also try it with some of the flavoured balsamic vinegars, such as fig.

Mashed Sweet Potatoes and Pears
Very, very tasty and I didn't even have white wine...just used water. It almost had a caramel type taste from the pears. I only used 1/8 c. sugar and 1 tbsp. butter in an attempt to keep the calories down. It really didn't need any more. My only complaint is that it was too watery despite the fact that I drained the pears and let the sweet potato dry out a little in the pot. I only added about 1/3 c. of the evaporated milk. My pears were quite ripe...maybe that's why? Ended up putting it in the oven for a while to try to dry it out a bit.
