As suggested by others, I doubled the honey, and added a bit of molasses, and also doubled the yeast, and added a small amount of wheat bran, and used rapeseed/canola oil instead of shortening.
As others have said, it is wonderful bread, with or without the extra honey/molasses.
The only complaint I have (with the original recipe) is the amount of time it takes. Don't try this unless you have a bread machine, or a free evening. The kneading is really a pain, but a bread machine makes it a lot easier. I've now tailored my own "quick version" of this recipe (using bread machine for mixing/kneading), and it works ok in the bread machine, but it's best if you do it all by hand.
I usually add 50% to the recipe, so as to make 3 loaves. If you really are going to do all this work (by hand), I suggest that you make at least 3 loaves. I've increased my rating from 4 to 5, because I've now tried many many wheat breads, and this is my favorite.
