Chewy Chocolate Chip Oatmeal Cookies

Reviewed: May 9, 2011
This is our favorite cookie. I make it several times a month for my family. My husband, who doesn't have a terrible sweet tooth, is constantly asking me to makes these! I have also given them to friends when I cook a meal for them. I can't tell you how many times I've been asked to share the recipe. The only 2 things I've changed: 1) I use White Whole Wheat Flour, 2) I usually omit the walnuts (b/c my husband prefers it that way). I don't ever cook/bake with AP flour, so I don't know how different it tastes. All I know is that WWW Flour is AWESOME!

Tangy Chicken Fajitas

Reviewed: Jan. 18, 2009
The only thing I changed was adding less vinegar. I'm not sure if this affected the taste in this way, but it was a bit "limey." So, when I make again, I'll use a bit less lime. Otherwise, great taste and recipe. I made these and put them in warmed tortilla with cheese, sour cream and home made guacamole. I halved the recipe but I wish I hadn't. We all wanted more after the two we ate!

Spaghetti Carbonara II

Reviewed: Jan. 11, 2009
If I could, I'd rate 4.5, but I rounded up. This is a great recipe and I tweaked a bit based on other reviewrs. I'm a turkey bacon fan but I used the real stuff this time. When it was done, I added one chicken breast to the bacon grease. When I added the onion I also added a half bag of frozen peas- we like peas especially with bacon. I did add the wine too. I've been adding a little splash to many recipes here and there and I haven't been disapointed yet. The last change I made was mixing the eggs and cheese together then pouring over the noodle mix. Also, I used just a little parmesan and in its place I used an Italian cheese mix. I prefer this over parmesan. Didn't add any pepper or salt at the end nor did I have any parsley. My whole family (including three kids under 4)ate this up. I must admit, I've never had carbonara until tonight. I was wanting Italian takeout and this fit the bill. DH and I ate the left overs for lunch the next day. It's in my rotation!

Grilled Apple and Swiss Cheese Sandwich

Reviewed: Jan. 9, 2009
I gave this a three because while I didn't really care for it, I still ate it. I must just not like swiss. I love grilled cheese sandwiches and I'm always looking for ways to jazz up the basic . I was excited about this one, but the swiss just isn't for me.

Incredibly Cheesy Turkey Meatloaf

Reviewed: Jan. 9, 2009
First of all, this was easy to make- always a plus in my book. And I like that it used pretty healthy ingredients. Here's what I did different. I grated about 5 or 6 baby carrots into the mix and chopped one bunch of green onion (I needed to use up these ingredients). I also had many slices of colby jack cheese so I cut those into squares and folded that into the mix. I didn't have any spilling out all over the place, but there were still "gooey" cheesy spots! Lastly, I mixed almost equal parts ketchup, worcestershire, and a reliable bottled bbq sauce to spread on top. My only complaint about this was I wanted more. Instead of a thin layer on top, I would have liked this taste to be throughout the meatloaf. I may try just adding more glaze on top next time or maybe serve a side of the sauce.

Scottish Bubbles and Squeak Patties

Reviewed: Jan. 9, 2009
These were pretty good. I used the cabbage mix and that worked well. I was guessing what a pound of potatoes looked like, and I think I was way off. I only used about 5 small/med. pottoes and I got about 8 large patties. Anyway, I salted the whole mixture a bit, but I also decided to salt the patties as they were cooking. I think this helped with taste. I might try adding more cheese next time simply becuase I couldn't really tell there was any in there as I was eating them. And my hubby LOVES cheese with everything. Lastly, I was wondering if a whole onion would be too much-- I love onions in things like this and I thought it was perfect. My hubby doesn't like much onion and he has to have them cooked. He didn't complain at all- in fact he said "I didn't like potato pancaked growing up, but these are really good." I did serve these with a sourcream and dried dill weed dip. We loved that. There you have it!

Best Marinara Sauce Yet

Reviewed: Jan. 4, 2009
Instead of the stewed tomatoes and tomato paste I used a big can of crushed tomatoes-it's what I had. Other than that, I did everything else exactly the same. It just wasn't what I was looking for. It had a "fake" taste to it and I just can't figure out why. I'll keep searching for one I like.

Sausage Rolls

Reviewed: Dec. 21, 2008
I got this recipe from a friend in my MOPS (mothers of preschoolers) group becuase I loved it so much and ate 2 or 3 helpings everytime she brought it. Much to my amazement, when I got the recipe I saw only these three ingredients listed-- and nothing else. When I make this recipe, I roll out on can of the dought in a 9x13 pan. Then spread the sausage and cheese mix on top. Lastly I roll out the second can of dough on top. I also use turkey sausage to be healthier. Soooooo gooooood!

White Cheese Chicken Lasagna

Reviewed: Dec. 20, 2008
Everything tasted well. One problem I had- I didn't add all of the spinach, chicken and ricotta at once. I thought the recipe called for layering that. So after the last noodles were added, I had to go back and stuff the remaining ingredients. So the only complaint I have is that there was too much spinach. And since every bite seemed to be a bit spinachy for us all, I think I will go ahead and use 1 box next time. I also added mushrooms- seemed to work out fine. I got this idea from a white sauce spinach and mushroom enchillada. Yum!

Playgroup Granola Bars

Reviewed: Dec. 20, 2008
Excellent. I used whole wheat flour-not AP. Also tried using wheat bran-great! I added craisins instead of raisins. Then I threw in some semi-sweet choc. chips. I read that some people didn't go 30 mins on baking time-I cecked at 18 mins and they weren't done. At 23 mins. they were starting to brown on the edges so I took them out. I probably could have let them go another few minutes and they may have set a bit better. They are yummy and cookie-like. Never buying granola bars again.

Chicken Pizzas

Reviewed: Dec. 19, 2008
Didn't really know how to rate this one. Here's why:First- I used some crusts that I buy at our Farmer's Market (which are super yum, btw). Second- My DH thought these were pretty good/would eat again. Third- My initial reaction was that these are different and not bad. But as I continued eating, the taste got overwhelming. I think it had too much creamy flavor and salty flavor going on. Definitley use low sodium soup. I think I would replace the cream of mushroom with something homemade next time.

Sour Cream Chicken Enchiladas

Very good. Then only thing I plan on changing for next time is using a bit less cilantro. I also improvised on the jalapeno slasa due to the fact that I couldn't find any.

Brownie Mounds

Reviewed: Aug. 14, 2008
These do indeed resemble brownies in taste. I used 100% organic wheat flour, and other than that I did not make a change. I made some with and some without walnuts (becuase my 2 yr old dumped most of them on the floor) and I like both.
