It is great to have a flavorful, healthy pasta dish (we use low carb pasta). Yes, you really need two bunches of asparagus, especially if you use the thing stalks. I use this great recipe to make three days of different dinners. Day 1, we have the chicken (cook 6 chicken breasts cut like tenders with seasonings in this recipe) and have asparagus as the side dish. Then on day 2, I use the left over chicken (dice it up) and add more asparagus to make this delicious recipe as is. We serve the pecans and the parmesan on the side so we can later use the leftovers on the third day. Day 3, take all the left overs put back in the pot and add chicken broth (fat free cream of chicken for more stew-like eating) and you can add some carrots, etc. if you like in the soup...why not? Serve with biscuits. Three nights of different dinners THANK YOU for the recipe. Great inspiration.
