Asparagus, Chicken, and Pecan Pasta

It is great to have a flavorful, healthy pasta dish (we use low carb pasta). Yes, you really need two bunches of asparagus, especially if you use the thing stalks. I use this great recipe to make three days of different dinners. Day 1, we have the chicken (cook 6 chicken breasts cut like tenders with seasonings in this recipe) and have asparagus as the side dish. Then on day 2, I use the left over chicken (dice it up) and add more asparagus to make this delicious recipe as is. We serve the pecans and the parmesan on the side so we can later use the leftovers on the third day. Day 3, take all the left overs put back in the pot and add chicken broth (fat free cream of chicken for more stew-like eating) and you can add some carrots, etc. if you like in the soup...why not? Serve with biscuits. Three nights of different dinners THANK YOU for the recipe. Great inspiration.

Pasta e Olio

We enjoyed this a lot. I used this as a side dish to some grilled Rosemary chicken--I had the low carb penne pasta on hand and it came out great. The next night I put it back in the skillet with some chopped up red and yellow bell peppers as a light main dish. Thank you.

Grilled Delmonico Steaks

My husband, teenager and I loved it. I only used about 3 grinds of salt--it's just how we roll in our household. I used White Worcestershire as that is what I had on hand and did not have any steak sauce and it still came out wonderful. I only had 1 1/2 hours for marinating so I just flipped the steaks once in while for good coverage. I used a grill pan in the house (our bbq is broke) I will definitely make again. THANK YOU

Chicken and Apple Curry

Used this for my Christmas Turkey leftovers. I included cut up carrots and fresh diced green beans (good color). This was a very simple, easy recipe--and as it is such a contrast from our Christmas dinner, I think I will use it for our turkey leftovers each year. (Cooked on stove top)

Garlic-Buttered Green Beans

These were perfect for my taste. I used fresh, un-cut beans, and I used crushed garlic (purchased in frozen cubes) but otherwise did not alter the recipe. The result was a very fancy looking, bright green (we leave the vegies crisp) side dish. Loved it.

Used this at a party and got rave reviews. Easy to make a LARGE BATCH ALL AT ONCE. Adapt recipe for 20 servings and add splashes of grenadine separately into ea glass.
