I LOVE this! I have made it about 5 times in the last few weeks. I added more beans, because I love beans, especially refried black bean. I also have done different variations with yellow summer squash, onions, green and red peppers, okra and zucchinni. Its been a huge hit at potlucks and when I have had guests over. I use brown rice and omit the salsa, because I think it might be a little runny with the salsa. I will make this again and again! yum!
