Best Tuna Casserole

Very good. The only change I made was to add more onions because we love them! The chip topping is a nice touch.

Braised Corned Beef Brisket

Yummy Sweet Potato Casserole

So easy using leftover sweet potatoes from Thanksgiving! I halved the recipe since it's just my Dad & I. Used an 8x8 pan. Turned out perfectly! The only change I made other than that was to place pecan HALVES on top instead of the chopped. Just a personal preference.

Minestrone Soup I

This was so easy & so very yummy! The only changes I made were the type of beans. I used red kidney, northern & black beans because I didn't have any cannelini beans. I also used whole wheat shell macaroni. Again, because I had it on hand...

Wonderfully yummy & easy! The only things I changed were; halved the sugar(didn't miss it),and blended it in a mini food processor to make it smoothe. PERFECT!! A definite KEEPER.

Turkey Pot Pie II

5 stars for taste & simplicity! The only thing I would do differently is to make sure the turkey doesn't have any broth with it. Mine was a little runny, but that was because I threw all of my leftover turkey into it, including the broth. I didn't have any frozen veggies on hand, so I used canned mixed veggies instead. It was very good, but I'm sure it would be even better if I had used the frozen veggies. Great way to use up leftover turkey!

Ham and Swiss Casserole

Loved it! Had just enough Christmas ham leftover to make this. The only 2 things I did different: 1. Used a 12 ounce bag of egg noodles instead of the 8 ounces called for. 2. used sliced swiss cheese instead of the shredded. I do this for my lasagne now and I like the control it gives me. Just cover the top with the slices. Yummy! I will DEFINITELY make this again!

Chocolate Covered Peppermint Patties

Easy! Yummy! No one believed there were mashed potatoes inside... For those of you having issues with them being too soft... you might need more of the 10X sugar to make them more like a dough. Just add a little at a time until it's the right consistancy. I used a pampered chef scoop to drop them onto the wax paper. This made them uniform in size. Flattened with the back of a spoon sprayed with non-stick spray. They look (almost) professional!

E-Z Chicken Tortilla Bake

It IS easy! I had leftover chicken & corn tortillas, and this was the PERFECT way to use them up. The only alterations I made were to add a can of beans, and to use mexican cheese, for extra flavor. I also used the medium heat salsa for the same reason. The only reason I did not give it 5 stars was because I still think it needs a little more spice. Next time I will probably add cumin... I will definitely make this again. Very quick to assemble & on the table in a snap! While it was baking I whipped up a nice tossed salad.

Mexican Salad

YUM! Made this for a shower, and everyone wanted the recipe. I ate the leftovers for a couple of days, then thought I'd change it up a bit and added rainbow pasta, black olives, and shredded cheese. It was a yummy pasta salad as well!!!

Hamburger Skillet Supper

I didnt have high hopes for this one... but was pleasantly surprised! I added the cream of mushroom soup and a can of mushrooms. At the last minute I added about a cup of sour cream as well. NICE! Very NICE!

Grilled Chicken with Mango-Riesling Marinade

LOVED this! I tried to stay true to the recipe, except for ONE thing... I did not have mangoes, so I substituted PEACHES instead. I figured they were fairly similar in texture & juiciness... Anyway, it was WONDERFUL!!! Everyone raved. Oh! I did add extra garlic cloves, because we are garlic freaks. Was actually looking for something lower in salt for a marinade. Everything else called for either teriyaki sauce or added salt. This was the best one I could find. Will definitely use this one again!

Crustless Bacon and Cheese Quiche

Loved it. Had to find a crustless quiche because of gluten-free people. It was great. I did it in pie plates instead of the large pan. Worked great. I think you could change the veggies to whatever you like... peppers, onions, broccoli, sausage... But I did enjoy the bacon/ tomato/ mushroom/ onion mixture. It was ALL eaten up! Not a piece left!

Crustless Spinach Quiche

You will NOT miss the crust in this quiche! Yummy! Had to cater a breakfast that had some people that had to have a gluten-free diet. THEY loved it. I LOVE it... I will make it again. Nuff said!

Chunky Broccoli Cheese Soup

Fresh broccoli is cheap & plentiful this time of year, and I was looking for something easy that doesn't use FROZEN broccoli. This did it. I loooooved it! I did make it last minute, so I didn't have some of the ingredients. Here are my substitutions... 1. No cream of celery soup, so I chopped some celery (abt 1 cup) and cooked it with the onion. 2. No milk... Added 1 cup half & half and 2 cans of chicken broth and 1 can cheddar cheese soup. Only used 2 cups cheese (shredded cheddar, not processed) 3. Had frozen grilled chicken breast strips. Used them instead of the canned. 4. No mushrooms... no substitution. : ( Will definitely do this again. VERY easy! One suggestion: If you have one of those small food processors, chop the onions, celery & broccoli in the same container. Makes it very simple & fast!

Ham 'N' Cheese Quiche

LOVE this recipe. I have 2 in my freezer right now. Nice for one of those extra busy days when I just can't get supper going fast enough! Very yummy! I want to try it with other meats as well... bulk sausage, summer veggies such as zucchini I think would be excellent as well.
