Yellow Squash Patties

These are delicious. I halved the batch and still used one whole egg. It was so good. I only had self rising cornmeal, so used that in place of the flour and cornmeal. Thanks so much for posting!!

Roasted Garlic Cauliflower

Absolutely delicious. I added some more veggies - onions, chayote squash and some red potatoes. Just upped the parmesan a bit. It was so yummy and a great way for kids and adults who aren't big veggie fans to eat them. My husband loved it, my son was ok w/ it, but still ate it.

Toasted Butter Pecan Cake

Shoyu Chicken

This was delicious. I omitted the red pepper flakes, as we don't like spicy. I also reduced the marinade to put on the chicken and rice at the end. I used boneless skinless chicken thighs. Next time it would be good to use Pineapple juice in place of the water and some small pineapple chunks in the marinade for the rice.

Beth's Spicy Oatmeal Raisin Cookies

Delicious. I only had regular shortening, so that is what I used. Plumped the raisins, but otherwise made it exactly the same. Very yummy. My husband tried one and then said he was going to eat as many as I would let him. :-) Thanks!!

Peach Cobbler for Two

This is delicious. I tripled the batch and added a dash of cinnamon and vanilla to the peach mixture. Thanks so much. I think next time I might sprinkle just a touch of sugar on the top of the biscuit mixture. Yummy!!

Feta and Bacon Stuffed Chicken with Onion Mashed Potatoes

This was really good. I used panko instead of regular bread crumbs and I had to use a red onion up, so I used that in the potatoes. I loved the potatoes the best. The chicken was good, I flattened it and then rolled it up w/ the cheese stuff in the middle. Thanks for a great and very rich meal.

Asparagus with Prosciutto and Pine Nuts

This is a great recipe, although we thought it was way too lemony and we love lemon. I would cut it back to about 1/4 cup or so. We made the recipe as is and didn't change a thing.

Peppy's Pita Bread

These were wonderful. I did half whole wheat and half white flour. I "fried" them in a skillet and they turned out wonderful. Some puffed, some didn't, but that was ok, I wanted them for the spinach and feta pita bakes on this website. YUMMO!!
