Garlicky Quinoa and Garbanzo Bean Salad

This was a great way to use quinoa and get some veggies and fiber too. I followed the recipe almost exactly, except that I cooked my garbanzos from dried, ahead of time, and I blanched my broccoli because I like it more tender. Also like many other reviewers I did decrease the amount of oil used. I imagine this recipe would also be good with toasted nuts, sauteed onions, or other add-ins. As-is, it's a terrific vegetarian way to get a well-balanced meal, and makes a really nice lunch for work days or a picnic.

Asian Salmon Cakes with Creamy Miso and Sake Sauce

Turned out great. Like others, I made some minor changes, using more salmon to increase the ratio of meat to crumbs; I also had to double the egg mixture. I had no sake, so used mirin. I'm not sure if that's why the sauce seems a little sweet. No big deal, it's really tasty anyways. One quibble with the directions: I had to really almost boil my sauce to thicken it. In my cooking lexicon, a simmer is just a few bubbles at the center; I hd to get the sauce going a lot harder than that to get it to the right consistency. Once I did, all was good. I served this dish with a simple Japanese sunomono (pickled cucumber) salad and got rave reviews from the family. Definitely will make again!

Mini Meatloaves

Outstanding easy weeknight recipe! I had to make a last-minute substitution - didn't have oats, so I used shredded bread that was past its prime. The meatloaves turned out great, and both my husband and my 7-year-old gobbled theirs up. It took under 5 minutes to put together and I was able to run out for an errand while my husband baked it ... now that's an easy recipe. Also, the sauce on top is the perfect complement to the meat.

Tangy Dill Potato Salad

We eat a lot of potato salad in our household... this is going on the Top 5 list. I got a huge bunch of dill in this week's CSA box - surprise! - and have been frantically searching for dill recipes. We don't care for the traditional dill potato salad recipe; this looked like a good alternative and, in fact, was even better than it looked. I used the Good Seasons Italian (the kind that you mix yourself in the cruet, made with both apple cider vinegar and balsamic vinegar), and followed the rest of the recipe proportions pretty exactly. I had no green onions so I substituted about 1 Tbsp of diced yellow onion. Also, it makes quite a lot of dressing - I had plenty for 5 lb. of cooked potatoes even when following the recipe amounts for the dressing. My whole family loves it - my husband, who is suspicious of "new" recipes, my daughter, who "hates potatoes". Great combo of flavors.

Deep Dark Chocolate Cake

Seriously one of the best chocolate cakes I've ever had or made... I'm not a "cake person" but this one could change my mind. I made it in a 9x13 pan and followed the instructions exactly, and it came out perfectly. The only thing I think could be improved on is the frosting - it was a little one-note sweet up against the richness of the cake. Next time I might experiment with a chocolate cream cheese frosting, or even just adding espresso powder to the buttercream recipe. All in all - this one's pretty foolproof, a real winner.
