Very easy and delicious. I also made this for a soup swap recently and received great reviews and recipe requests.

Grilled Ginger-Peanut Pork Tenderloin

Reviewed: Dec. 3, 2008
This turned out really well. It was too cold outside for the bbq so I roasted it in the oven at 450. It took about 25 - 30 minutes to get an internal temperature of 150.

Garlic Prime Rib

Reviewed: Nov. 9, 2008
This was my first time cooking prime rib and it turned out fantastic. The prime rib roast that I was using was only about 3 lbs so I cooked it for 10 minutes at 450 and then an additional 60 minutes at 325 ... other than that I followed the recipe as written. I will definitely make it again.

Ash-e-jow (Iranian/Persian Barley Soup)

Reviewed: Apr. 22, 2008
I followed the recipe exactly and it was very tasty! I was looking for something different to do with some barley that I had and this worked out great, although I don't think I would want it all the time. I think next time I might try using saffron as others suggested.

Sweet Potato Potato Salad

Reviewed: Dec. 2, 2007
Very good! It wasn't so different from a typical potato salad. The sweet potatoes just added a slightly different taste, not to mention the the extra nutrition that comes from sweet potatoes. Everyone enjoyed it and we will definitely make it again!

Peanut Butter Vegetable Chicken Soup

Reviewed: Nov. 18, 2007
It turned out all right. I don't think I will make it again though. The flavor was decent but it seemed to want to separate on me. I was a bit disappointed since we really love the African Sweet Potato and Peanut soup, which also calls for peanut butter. Oh well, it is definitely worth a try! Perhaps I did something to cause it to separate or maybe it is my peanut butter??

Easy Guacamole

Reviewed: Nov. 18, 2007
Everyone loves this guacamole! It is so simple, nothing too fancy ... just perfect the way it is. But I do have to say that the last time I made it my avocados were slightly less ripe than they should have been and I was having a difficult time mashing them so I blended them with a couple of table spoons of cream cheese to help bind everything together and my guests all raved. I may be adding cream cheese from now on since my husband thought it was the best guacamole he ever had.

Almond Cookies I

Reviewed: Nov. 18, 2007
I followed the recipe exactly since it was the first time I made these cookies and they weren't bad. They had a nice mild flavor. I think next time I will follow the advice of others and add a bit more amaretto and toast my almonds to bring out the flavor a bit more since that is what I am after. They also weren't exactly a pretty cookie, perhaps they could be rolled into balls and pressed down with a fork to give them a nicer shape? They are definitely worth trying again.

Irish Cream Truffle Fudge

Reviewed: Nov. 18, 2007
This turned out sooo tasty! I took the advice of others and lined the pan so that I could remove the fudge to cut it. It crumbled a wee bit when I cut it so perhaps I didn't pack it down as well as I should have. I will take a bit more care pressing it into the pan next time I make it (and there will be a next time in the near future) ... hopefully that resolves the crumbling issue! Makes me wonder what other liqueurs I could try in this recipe.

Honeyed Pork Chops

Reviewed: Nov. 18, 2007
We really enjoyed this recipe. I did use apple juice instead of water and added minced garlic. The flavor was very nice! The only improvement I would perhaps make next time is to thicken the sauce slightly and/or marinate the meat a bit before hand as others suggested. This would be great on a tenderloin as well! Mmmm.

Garlic Chicken Fried Chicken

Reviewed: Mar. 7, 2007
This turned out really good. I didn't have seasoned bread crumbs so I used some cajun seasoning to season plain bread crumbs. Oh, and I did follow others advise and I used fresh garlic.

Cajun Chicken Pasta

Reviewed: Jan. 9, 2007
I've been making this recipe for a couple of years now and I still love it. The spices are a great combination. It is nice to have a creamy pasta that isn't bland. I use fresh basil and I do thicken the sauce because it is a bit thin.
