Maple Fudge

So, I decided not to take any chances and added about 3/4 c sugar to this, and had no problems at all. (Even though syrup has plenty of sugar in it!) I didn't quite have 2 c syrup left so I added a bit more half-and-half. Once it cooled down to about 115F, I only had to mix it for a few minutes before it was ready to go in the pan. I added the vanilla and some crumbled up maple bacon for a salty twist, and it turned out GREAT.

Baked Apple-Pecan Maple Pancakes

This was good! I did not have the dry problem at all. Between the butter on the bottom and the moisture from the apples and syrup, it was moist and yummy. I did add a few apple chunks into the batter just for my own preference, and we ate it with a little more syrup on top.

Stuffed Guinea Squash (Eggplant)

This was delicious, and like others said, really did remind me of stuffing. I didn't quite use all of the bread crumbs, and I used less cheese as well just to cut back a few calories. But it was still tasty!

Eggplant with Garlic Sauce

This was really really good. I used minced garlic and brown sugar like others suggested, and doubled the sauce since we were eating it with rice. I used half eggplant and half zucchini since I didn't have enough of the eggplant. SO GOOD!

Rainbow Veggie Chili

Yum! What a great base recipe. I totally cheated and just threw this all in a crockpot and cooked on Hi for 4 hours. I didn't quite have everything listed, so I used Rotel instead of crushed tomatoes + 1 fresh tomato, 1 can Pinto beans + hot sauce + 1 8 oz. can tomato sauce, and a bit of cumin. Add some cheddar on top & voila!

Moussaka

Well, this was my first time ever making Moussaka, so I followed the written recipe. It had a nice taste, I wish, though, that they told you to drain the meat after browning because the end result turned out quite greasy. Maybe that is supposed to be a given, but again, first time making it - so I followed the recipe to a tee! Next time I'll read the reviews before attempting it again.

Black Bean and Artichoke Burritos

Amy's Cilantro Cream Sauce

This is reeaaalllly good. I use it with the Southwestern Egg Roll recipe as another reviewer suggested. I have never used a full 7 oz. of tomatillo salsa...the kind I got was super hot as it was so I ended up just using 3 tablespoons, maybe 4. I also add a little minced garlic in place of part of the garlic powder. Just 'cause I love a stronger garlic taste.

Southwestern Egg Rolls

I have made this things several times now and everybody always loves them (including me). I usually just use what's on hand. Canned chicken works fine and is quicker. I have been omitting the spinach since it's not much and couldn't really taste it anyway; Pepper Jack instead of Monterey; and baking instead of deep frying. Still turn out great!

Broccoli Beef I

this was pretty darn delicious. I didn't realized we were out of soy sauce, so used Worcestershire sauce instead. I used 2 cloves of minced garlic, added 1/2 tsp red pepper flakes (we like spice), doubled the broth, and added onions. Very good. Would be great over rice, but we ate it alone to cut down the carbs. Still very filling.

Linda's Lasagna

Oooh my goodness, I usually prefer a spicy Italian sausage lasagna, but this one competes! It was so delicious I ate more than I should have. I also used ricotta cheese like other reviewers, and I added mushrooms and used minced garlic instead of garlic powder. I also added extra Parmesan...let's face it, there's no such thing as too much cheese.

Dark Molten Chocolate Cakes

This really came out delicious. I used Ghirardelli 60% dark chocolate mixed with a few ounces of Ghirardelli Espresso Intense Dark chocolate, and oh wow was it fantastic. Raspberries and strawberries go really well with this chocolatey goodness.

Burgundy Pork Tenderloin

This turned out very good. I did use the full amount of wine, and I don't think it was too much, but I still may have preferred using a bit less with broth instead. I used Wiederkehr's Burgundy and Pork gravy.

Banana Sour Cream Bread

The first loaf was gone within 24 hrs. and it was only me and my husband eating eat. It is soooo delicious! I did half the recipe, and I definitely could have used 4 bananas instead of 3. I can't make this too often though with all the sugar!

Garlicky Baked Butternut Squash

This had a wonderful flavor to it, even reheated; ant this was my first experience cooking (and eating) butternut squash. I followed other reviewers' advice and adjusted the temp down and cooked for 35 min., but mine was still not tender enough, so I ended up cranking it up to 400 and leaving it in longer.

Baked Tilapia

Better than I expected, I was skeptical about the tomato paste. But I did change it a little. I reduced the oil to 1/2 cup, omitted the butter, and added 1/2 tsp. Italian seasoning. I also didn't have garlic powder so I used 1 tsp. minced garlic and then topped with gorgonzola cheese I had left over. I didn't have green pepper on hand so used eggplant instead. Very tasty!
