I'm a newlywed and college student, so sometimes time is not on my side for cooking. But I enjoy it so much, I try to make time, even when I'm by myself.
My favorite things to cook
Fajitas, chicken, tilapia, salmon, and all kinds of dessert.
My cooking triumphs
My husband and I catered our own wedding. However, I got sick right before and ended up only making the truffles. So my husband miraculously cooked the rest of the food: 4 lasagnas, 4 pizzas, and a ton of spaghetti sauce. All of our guests loved the food.
My cooking tragedies
Once I tried to make a sponge cake and didn't 'fold' the mix well enough so that when it was done, there was a hard clump of powder right in the middle!

Maple Fudge
So, I decided not to take any chances and added about 3/4 c sugar to this, and had no problems at all. (Even though syrup has plenty of sugar in it!) I didn't quite have 2 c syrup left so I added a bit more half-and-half. Once it cooled down to about 115F, I only had to mix it for a few minutes before it was ready to go in the pan. I added the vanilla and some crumbled up maple bacon for a salty twist, and it turned out GREAT.

Baked Apple-Pecan Maple Pancakes
This was good! I did not have the dry problem at all. Between the butter on the bottom and the moisture from the apples and syrup, it was moist and yummy. I did add a few apple chunks into the batter just for my own preference, and we ate it with a little more syrup on top.

Stuffed Guinea Squash (Eggplant)
This was delicious, and like others said, really did remind me of stuffing. I didn't quite use all of the bread crumbs, and I used less cheese as well just to cut back a few calories. But it was still tasty!
