Cake with Buttercream Decorating Frosting

Really Great. Stiff enough for roses to hold up and has a nice crust, not too soon but soon enough. I used almost all the milk (after I took some out for the roses) and had a frosting that worked for pipping and spreading. Tastes great also, not super sweet. I had enough to cover 24 cupcakes and 3 single 8" round cakes. And I have some left. This makes a lot.

E-Z Drop Biscuits

Really "E-Z" and very good! I added some garlic powder and dried basil to these and they were awsome for how easy they were. I did use a little extra baking powder and left out the cream of tartar (it's in the baking powder so it's not needed again). They puffed up pretty nicly and were light and flavorful.

Tres Leches Cake

Really good but not worth the effort, to me. I'll just get one at the local Mexican bakery. But for people who can't just go get one, it is very good.

Cake Balls

Very good, but VERY time consuming. Also, make your balls truly bite size, better for the eating. And DON'T try to dip them in just regular melted chocolate (I ran out of the coating) That is a big mistake.

Clone of a Cinnabon

I made these for mother's day brunch and they are SSSSSOOOOOOOOO GOOD!! I only made one change to the bun itself: I mixed the sugar, cinnamon, and butter together and spread it on, instead of spreading the butter and sprinkling the others. It was SO much easier and more uniform. With the frosting, I doubled it and used a whole 8oz brick of cream cheese. I didn't have a problem with the filling coming out of the buns(Maybe because I made these the night before and had them in the fridge?) So good.

Chicken and Biscuit Casserole

Very good, though it could be a little more flavorful as written. I made this once a while ago as written and it was good, just a little bland. This time I seasoned the chicken breasts with garlic powder and onion powder and then pan seared them in a little butter. I removed them from the pan and then cooked the veggies. I used frozen peas instead of canned and added corn. I also used 1 cup whole milk and 3 cups broth and sliced the chicken and added it back in. Then I used "E-Z Drop Biscuits" from this site b/c I was out of mix. The second time, with my changes, was a five star dinner; but as written I'll give it four stars.

Waffles II

I made this as written, the only difference is that I used 2:1 ratio of wheat flour to white flour. This is a good waffle for someone who wants to top it with fruit or syrup. Personally, I like my waffles to stand alone and eat them toasted with a little butter. I will fiddle with this one-it's a good base. The batter is thick enough to hold something (I'm thinking chocolate chips or blueberries) and it's easy to pour into the waffle iron and it cooks in only 2 minutes while others I have tried can take up to 5! I scaled the recipe to 12 and got 14 8in round waffles. They are very filling (maybe becuase I used wheat flour?) and we have plenty left to freeze and eat this week before school for breakfast or as an after school snack. Thanks Razz!

Didn't need to change a thing! I did use half whole wheat flour, but that's it. Everybody loved them. Have to say though, the syrup is a waste of good butter.

Campbell's® Quick and Easy Chicken, Broccoli and Brown Rice Dinner

I give it 3 stars as it's written but with my changes it's a 4.5. Almost a 5. My changes: regular brown rice (not instant), fresh broccoli and carrots, and LOTS of seasonings. I seasoned the chicken before browning with garlic powder, salt, pepper, and onion powder and browned them in butter. I used chicken broth (low sodium) in the rice in place of the water and used cream of chicken and roasted garlic soup. With all that, it was good and I'll make it again-would have been pretty bad without, I think.

Scalloped Potatoes and Onions

So good! I left the skin on the potatoes for the health benefit and I doubled and cooked the onion in a little butter until soft. Very very good.

Chicken Roll Ups

So good, moist and tender...yum. My husband, 3 1/2 year old, even my 16 month old ate it up, no leftovers! I marinated them overnight (dinner plans changed the night we were going to have this) and added some Mrs. Dash original seasoning to the chicken before I rolled them (just on the inside) and they were so flavorful! Do use toothpicks though, I didn't and the bacon kept falling off during cooking. Thanks, will make this again for sure.

The Best Rolled Sugar Cookies

So good. I used powdered sugar instead of flour to roll these out, no need for anything else. These are so good, they were gone within an hour of our party. I would suggest that if you are making a double batch, to just pull out of the fridge what you are going to roll right then. The warmer the dough got, the more the cookies rose in the oven, and the less they kept their shape.

Home Style Macaroni and Cheese

Really very good. I doubled it (we have a big family) and only used 12oz of the cream cheese. The flavor was just there, under the other flavors, but it did make it very creamy. I also didn't bake it but I did put Ritz crackers on top and broil it a minute, until they were brown. Everyone loved it, even my 3 1/2 year old, despite his initial reaction "It's not real mac and cheese mommy, it's not even yellow!"

Chicken Pot Pie IX

Really excellent. My whole family (6 yr, 5yr, 2 1/2yr and husband) enjoyed it and my husband wants me to make it again. I didn't have purchased pie crusts so I made my own, the "boiling water pie crust" from this site, though I always use butter instead of shortening in that-makes it much easier to work with. I also doubled the veggies to bulk it out a bit, and added corn. Very, very good.

Spinach and Potato Frittata

Fantastic. Really! I used a bag of frozen spinach, since that is what I had on hand, and shredded the potatoes because I prefer the texture. I also added some beef chorizo. I baked it instead of using the stovetop method, since I had other things on the stove (made this for a brunch) and it worked very well @ 375 for about 30 minutes. It didn't dry out, which was my concern. Next time I think I'm going to try bacon. YUM!
