Broiled Scallops

Simple and delicious. I mixed the ingredients and spooned over the scallops. Then I sprinkled some parmesan and black pepper on top before broiling.

Chutney Chicken

This was just okay for me. I used mango chutney and skipped the salt. It was easy and quick, but the flavor wasn't anything special. I probably wouldn't make this again.

Sweet Potato Casserole IV

I used 2 29 oz cans of sweet potatoes, drained and mashed them, then followed the rest of the recipe exactly. It turned out great! A big hit with everyone!

Easy Chicken Satay

This recipe was delicious - even better than our local Thai restaurant! I broiled the chicken skewers instead of grilling, but followed the rest of the recipe exactly. It was a hit with the whole family. I will definitely make this one again and again.

Cooky Cookies

Excellent cookie! I was unsure about using so much oil, but it turned out great. I didn't have unsweetened coconut, so I used sweetened and it was fine. I also added 1/2 c of semisweet chocolate chips and 1/2 c of butterscotch chips. Yummy!

Shrimp Enchiladas

It was good but I made a lot of changes. I used cooked shrimp instead of raw. I used corn tortillas instead of flour. I added black beans and corn to the filling. I used enchilada sauce instead of salsa on top.

Crab Wonton Cups

These were very good. I used canned chicken instead of crab and added a little extra curry. I didn't trim the wonton skins. I just pinched the tops of them. The water chestnuts add a great crunch to these wontons.
