Fudge Brownies I

Reviewed: Jul. 4, 2007
This is a very nice, easy recipe. The brownies turned out moist and gooey just like we love them. However, I am giving this recipe only four stars because I thought they lacked a bit of chocolaty taste (they were also rather caramel colored than brown). I put a coffee/chocolate glaze and cocos on top (1 TB Butter, 2 TB confectioners sugar, 1 TB dark cocoa, 1 TB coffee; heat all in small saucepan and put immediately on hot cake). And then they turned out very good. I will make this recipe again, thanks!

Cinnamon Swirl Bundt Coffee Cake

Reviewed: Apr. 9, 2007
We really liked this cake. It's quick to make, moist and keeps fresh for a few days. However, I only give this recipe four stars because the cinnamon swirl "baked out," i.e. the sugar caramelized and became as hard as stone. I guess using confectioners sugar could fix that problem.

Lemon Cream Cupcakes

Reviewed: Mar. 14, 2007
Yum! I was actually in search of a recipe for vanilla cupcakes. So I just replaced the lemon with more vanilla and they turned out great. I didn't have the problems with the frosting another reviewer talked about. Maybe the butter he/she used was too warm. My frosting was a bit too soft at first but after I put it in the freezer for about three minutes it was just right. Thanks for sharing this recipe.

Chicken Makhani (Indian Butter Chicken)

Reviewed: Mar. 8, 2007
We loved this chicken Makhani. We followed the suggestion of some reviewers to use ground cashews instead of corn starch and added coriander and heavy whipping cream instead of half-and-half. It tasted like in our favorite Indian restaurant.

Chocolate Chip Cream Cheese Muffins

Reviewed: Oct. 3, 2006
I'm not overwhelmed with the results of this recipe. I had to decrease baking time because the muffins browned unpleasantly after only about half of the baking time was over. They turned out ok, but I'm sure that if I hadn't pulled them out of the oven early they would have been as hard as a rock. Taste-wise they are ok but not exceptionally great, some extra-kick is missing here.

Vegetable Koftas

Reviewed: Oct. 2, 2006
I really liked this recipe, especially the tomato sauce was delicious. However, the Koftas itself were a bit too soft for my taste. Next time I would probably use a type of potato with a higher starch content (I had used red potatoes.)

Ukrainian Apple Cake (Yabluchnyk)

Reviewed: Aug. 13, 2006
Yummy! One of the best apple cake recipes I've ever tried. It's wonderful if you serve the cake with whipped cream.

Broccoli and Tortellini Salad

Reviewed: Jul. 18, 2006
Well, well, everybody rated this recipe with five stars but I wasn't really convinced. I liked the basic idea of sweet and sour but I think there is way too much sugar in this recipe. The raisins alone would have done the job. If you want this to be a bit more on the healthier side reduce sugar and replace half of the mayonnaise with non-fat plain yoghurt. Sorry, I just didn't like it at all.
