Quick Brussels and Bacon

Didn't have any shallots/onions on hand, but sauteed the fresh brussels I picked up for the same amount of time and DEVOURED them! SO yummy, will definitely be adding to the rotation!

Coffee and Donuts Ice Cream

WOW. I skipped the donuts and just made it as coffee ice cream and I was blown away. Make sure to refrigerate the batter overnight if you're using the KitchenAid attachment. Smooth, creamy, and very satisfying. Plus, I always have everything but the heavy cream on hand, making it way cheaper than buying packaged ice cream!

Zucchini Brownies

I thought this was more like a moist cake than a brownie, no eggs added, but still absolutely loved it. Unfortunately, I was out of nearly all the frosting ingredients, but the cake itself was still spectacular. You'd never know there was a zucchini in it!

Smooth Sweet Tea

Ginger Glazed Mahi Mahi

I was at a loss as to how to serve mahi mahi, but this did the trick! I skipped frying it, and broiled instead. From what I can remember, it only took a few minutes!

Dee's Roast Pork for Tacos

Like other reviewers, I used my CrockPot. Dumped everything in in the morning, and we were ready to roll when I got home from work! We served ours on Cinco de Mayo with mango salsa, guacamole, and a little sour cream. I got rave reviews! Definitely a regular in our rotation.

Super-Delicious Zuppa Toscana

We like it mild, so I skipped the red pepper flakes. I also subbed milk for the heavy cream and kale for the spinach, and we absolutely LOVED it! It makes a ton, but freezes well to take to work for lunch. Deeee-lish!

Miss Betty's Super Quick Dinner Rolls

So easy, so moist, so yummy! These rolls get extra points for being so versatile, too-- they might be a little boring for some tastes to start, but the possibilities for customization are endless. A regular in our house.

Oatmeal Crispies I

Yummmmmmm! I skipped the shaping/chilling/cutting/smushing steps, since I'm not a fan of extra steps in cookie baking. I swapped the walnuts for chocolate chips, and just stuck the extra dough in the fridge as each batch baked. I made rounded teaspoonfuls, and got 4 dozen cookies out of the recipe. I wound up cooking each batch about 14 minutes-- crispy on the outside, a little chewy in the middle.

Snow Peak Frosting

Bland and strange consistency. Mine tasted like egg whites and not much else, which wasn't what I was going for. I doubled the vanilla and added sugar, but it didn't seem to help much. I should have just gone to the store to buy butter and confectioner's sugar and saved myself the hassle.

Sirloin Steak with Garlic Butter

Oh. My. God. Hands down, the best steak I've ever made myself, and definitely up there with the best steaks I've had. I only had garlic salt on hand, so it was a bit salty, but I know it will be killer with garlic powder instead. I scaled down the recipe for 2 steaks (petite filets, but they were seriously on sale!) and used 1/4 c. butter and 3-4 cloves of garlic finely crushed. I sprinkled some pepper and garlic salt on the steaks before putting them on the grill, and grilled them to about medium. Definitely give them some time to rest and soak up the yummy garlicky flavor! Served with baked potatoes and green beans... yummmmmm!

Delicious Black Bean Burritos

YUM! I doubled the amount of black beans, kept the cream cheese amount the same, subbed canned green chiles for the jalapenos, added a sprinkle of taco seasoning, and added cheese before wrapping them up. Same basic recipe, but adjusted for what I had on hand. Made 5 or 6 burritos when combined with some rice.

Artichoke & Spinach Dip Restaurant Style

This has become my signature dip-- I'm always asked to make it for parties! I use one full 8 oz. block of cream cheese, and instead of adding extra roasted garlic, I use most of a jar of Classico Roasted Garlic alfredo sauce. Make sure to mix all the ingredients together in a bowl before pressing it into a baking dish-- it incorporates the ingredients much better!

Excellent Broccoli Cheese Soup

I'm not sure why, but mine came out much much thinner than I was anticipating, which was a bit disappointing. In an effort to up the amount broccoli per other reviewers, I over-broccoli-ed the soup, which detracted from it a bit. Next time (and there will be a next time!) I'll not use so much broccoli and try to make it a bit thicker. Great start for a recipe!

Taco Soup VI

Delish, quick, and satisfying! I made this for my boyrfiend, roomate, and her boyfriend, and we still had tons of leftovers-- which were also really good! We crunched up some tortilla chips on top, and if I had sour cream and cheddar on hand, would have added those as well. Thanks!

One Bowl Chocolate Fudge

I have had nothing but success with this recipe! I've made it rocky road-style, with walnuts and marshmallows, and I've also made it with just marshmallows to appease my boyfriend. Both times, the fudge came out perfectly. A tip if you're using the microwave-- keep an eye on it and stir a little bit partway through to keep smooth. I've also used fat-free condensed milk, which made no difference to the recipe. I'm heading to the store now to get the ingredients to make it for tomorrow!

Mom's Warm Milk

I sized up this recipe on the fly (which may have accounted for my comment to come), but I found that the nutmeg was a little much for me. Next time, I'll just use a dash or use cinnamon like some other reviewers have commented. It's so yummy and relaxing... I shouldn't have made it while I was doing homework!
