Rye Beer Bread

Chantal's New York Cheesecake

This is a fantastic cheesecake recipe - used cinnamon graham crackers and turned out beautifully. Works well with cream cheese that was previously frozen, so a great way to take advantage of sales! Did have to use 5 T melted butter to get crust right consistency.

Italian Spaghetti Sauce with Meatballs

Made just the meatballs because too busy to make sauce last night - they're terrific! Used 1:1 sausage:hamburger; 1:2 would probably be better. Doubled it and only used one egg - whoops! - but turned out well anyway. Think they'd hold together better as written.

Excellent! I rolled these slightly thinner than an inch - maybe 3/4 - and they were perfect. A biscuit for biscuits & gravy or a base for shortcake - couldn't ask for better.

Easy Red Pepper Hummus

This is a great basic recipe - I also omitted the water, and doubled the chickpeas, olive oil, tahini, and seasonings. the consistency was very good. I will say that it is not as garlicky as we prefer - next time I will use at least a clove of fresh garlic, instead of the powder.

Apple Strudel Muffins

I tripled this to use up some apples, and while very good, the recipe as stated didn't have enough liquid - I added about 1/2 c (per recipe) of milk to get the right consistency; also added nutmeg, cinnamon, and cloves.

Lemon Sugar Tea Cookies

These are really great! You can really taste the lemon - I used a little yellow food coloring and tapped the cookie sheets on the counter to make them flat right after taking them out of the oven.

Black Bean and Salsa Soup

Wow - really quick and delicious! I only blended half of the black beans, because I like a little more texture in soup; I also ended up adding half a can of refried beans because I tend to like thicker soup than this made - I thought it was a bit thin. I used chicken stock because it's what I had on hand, and added a little lemon juice and cilantro at the end to give it a little more kick.

Roasted Pork Loin

Really good marinade! We cooked this on the grill rather than in the oven, and used herbes de Provence instead of just rosemary. Also added a little horseradish mustard (because we like spice!). That said, this marinade made the pork incredibly tender and flavorful.
