Fortune Cookies So Easy

Ok everyone, these are easy with some tips. Put the oven to 350, not 375. Grease cookie sheets really, really well. I added more water to thin the dough and added no vanilla extract, all almond and about 1 tsp. I used a old metal cookie sheet, not an airbake. Spread dough out THIN, bake 4 minutes, flip cookies over bake 30 seconds more. Work really quick, and these look just like the real things!

Jamaican Rice

Ok I made this for girls night, theme was Jamaican food. I used a can of coconut milk and water, brown basmati rice. Smelled good but tasted weird to me. Guess I don't like Jamican food.

Fish Fillets Italiano

I used dried oregano and fresh basil. Used Marsala wine, but didn't need it. Very, Very good over a bed of freshly saute spinach with garlic. Really tasty and healthy, will make it again.

Carrot Cake III

I cut the recipe in 1/2, used a 8 inch greased/floured pan. Subbed brown sugar, crushed well drained pineapple, and yummy!! Next time I'll make a full recipe............oh my poor hips!

Caramel Apple Pie II

Ok I did change it. I used my regular apple pie recipe, decreased the sugar, no taffy mix and 1/2 a container carmel dip. I only used less sugar because so many people comment on how "too sweet" it was, I wish I would have done the full sugar,I felt it should have been sweeter.

Yummy Honey Chicken Kabobs

I just used the chicken, and marinated for an hour. Really really good. I can see that longer would be better, but I didn't have the time. I will definatly make this again.

Caramel Apple Jam

I must have had really sweet apple because I cut the sugars to 1/2 and it was sweet enough for me. I think next time i'd like to food mill the apple and have it be smoother. But I will make it again.

Fresh Peach Pie

I make my raspberry pie this same way(rasp gelatin/rasp), mine didn't look too pretty but tasted good. I used a graham cracker crust and not reg pie crust. Don't know if I'd make it again, but my kids sure loved it.

Fiery Fish Tacos with Crunchy Corn Salsa

Yes, I know I should have realized that when it said fiery, it would be hot. But holy hannah, I cut the cayenne to 1 tsp., pepper and salt to 1/2 tsp each and it still almost took our heads off.(to those who can eat it that hot, hats off to you) Still it was fabulous, and you HAVE to make the corn salsa with it. I doulbed corn (no jicama) and chopped up a avacado. My kids loved it, the oldest even loved the heat, youngest not so much and my husband ate it sans the salsa or avacado. With a little tweaking for our "tender midwest" palate, I will definatly make this again.

Simple Country Ribs

I did not use the onion, and use fresh bbq sauce while grilling. I can't stress enough to let meat sit for 10-15 minutes covered after taking off the grill. My second rib was much juicier than the first one was. I'm not a big rib fan but these were ok.

Peach Curry Glazed Pork Chops

These chops would have been even better if I haden't charred them on the grill. Nobody's fault but mine........I did add pepper to the sauce and use orange marmalade (no peach jam). Will use it again.

Oat-Rageous Chocolate Chip Cookies

I used an extra 1/2c. flour, milk chocolate chips and flattened them. Good but not over the top. Doesn't make very many either.

A Plus Fair Corn Dogs

I soured milk, and really, really dried the dogs off, dusted them w/cornstarch, and I still had a difficult time keeping the batter on. I wish the inside of the dog was hotter, but I will admit the flavor was fantastic. We rarely deep fry anything anymore, but this will be a treat every now and then.

Colorful Corn Chowder

I made this for a friend after he had sugury so I only got to sample it. I 1/2 the recipe, used fresh potatoes, and added some cooked bacon. His 6 year old gave it thumbs up! Made it for us, freezes great,actually tasted better, reheated.
