Artichoke Stuffed Mushrooms

Huge, huge, huge success! I needed to find a veggie-friendly appetizer dish for my Vegetarian friend that was quick and easy and this recipe fell in my lap. I followed pretty much everything to a T except I added paprika and a few tsp of hot sauce to the mixture. These mushrooms were gone in less than 10 minutes!

Smoked Salmon Pesto Pasta

This was great! I love the fact that it really only did take about 15-20 minutes to cook up everything. We ended up using baby portabello's and a bit more garlic. I added 1/4 cup dry white wine and instead of tomato paste, I put 1/2 can of basil diced tomatoes and added paprika toward the end of the frying to add some spice (It really helped). Overall, a fantastic dish we will use again.

Chicken Florentine Casserole

This was very tasty and creamy - however I only used 1 pkg. of frozen spinach and it was still overwhelming (And I love spinach!). I also subsituted skim for half and half. Next time I will not use spinach and try artichoke hearts instead.

Chicken, Garlic, and Sundried Tomato Pasta

This was phenomenal! I also doubled all the ingredients for the sauce and added 2 chopped zucchini’s. I only used about 3/4 cup of skim milk and that was plenty. I also added about 1-2 tlbs of sugar near the end, while it was simmering.

Barbeque Beef Casserole

This is was fantastic! I subsituted with ground turkey instead and drained the grease before adding the veggies. I also did not drain the canned tomatoes and went to a 1 cup of BBQ sauce. I used about 1 1/2 box of cornbread mix and even that was a little thick. Defintely a keeper!

Curry-Coconut Shrimp

This was absolutely amazing! However I did have to change a few things.. Like the other reviewers, I added 2tlbs butter to the oil before saute the veggies (added 1 cup peas) and added 2 tlbs curry instead and 2 tlbs flour with the seasoning instead of cornstarch at the end. Also, I added about 3/4 can (14oz) of LITE coconut milk. Everyone went crazy over this! You might add a little more flour at the end when cooking the shrimp - it all depends.

Richard's Chicken Breasts

This was pretty good except there was not nearly enough sauce left - I would say use about 2 cups worth and then the sauce would be perfect. I also added about 2 cloves of garlic, chopped, and about another half cup of mushrooms (for the mushroom lovers!)

Parmesan-Black Pepper Arborio Rice Pilaf

This was okay - I felt it was missing something. It took me well over 20 minutes to cook this and even then it was still a bit tough and nutty. It defintely needed more chicken broth - went through almost 3 cans.

Spicy Flank Steak

I did everything exactly as recipe stated and it came out horribly bland! I ended up frying it up on the wok and adding sugar and extra cayenne to make it even edible.

Cajun Seafood Pasta

I tried this recipe and it was fabulous!!! My boyfriend and roomate both went crazy over it (They went back for thirds!!!). I ended up using fat free half and half instead of heavy cream and it came out just as great. Definetly restaurant quality.

Curried Chicken with Mango Rice

I made this the other night for my boyfriend (who loves mangoes) and I have never seen a bigger smile on his face. I ended up adding about a 1/2 cup of coconut milk at the last 5 minutes and it was absolutely perfect.
