Shredded Beef Chimichangas

Reviewed: Aug. 23, 2006
WOW! This was so good my family fought over who got to take the leftovers for lunch tomorrow. I took the easy road and dumped all of the ingredients into the crockpot, crocking it on low all day. I didn't melt the butter for the tortillas--instead I spread it on there and let it melt in the oven. I put cheese inside the chimichanga instead of the outside, and it worked out great. I will be making this again soon!

Salmon Rosemary Burgers

Reviewed: Aug. 11, 2006
These turned out great! I used some leftover cooked salmon fillets and substituted a little dry onion soup mix for the onions (I was out). I didn't have any horseradish either, so I used extra Dijon mustard. Best way I've ever had salmon! I can't wait to try it with the horseradish and red onion.

Sesame Noodles

Reviewed: Jun. 11, 2006
This was way too oily and the flavors weren't strong enough. We would have been better off just adding a tablespoon of sesame oil to the pasta.

Baked Pork Chops I

Reviewed: Jun. 8, 2006
This smelled wonderful as it cooked. Unfortunately it was very bland and salty...

Shredded Beef for Tacos

Reviewed: Jun. 8, 2006
I was all set to make this recipe when I realized that I only had two of the ingredients--meat and white wine. I saw that another reviewer had used salsa in place of the hot tomato sauce. I had some green chile salsa on hand (it's not tomato based, but some brands have chopped tomatoes in them) so I used that instead. It turned out fabulous! The meat was so tender and flavorful. To help shredded beef retain its flavor and moisture, I pull apart the roast then place the shredded meat back in the crock pot. I let it marinate in the juices for at least 15 minutes before serving.

Pineapple Chicken Delight

Reviewed: Jun. 6, 2006
This recipe was okay. The chicken was very tender and moist, but the rest of it just wasn't that exciting. If I use the recipe again it will be for the chicken and pineapple by themselves.

Simple Slow Cooker Meatloaf

Reviewed: Jun. 5, 2006
This is the best meatloaf ever! I didn't have any sausage, so I just used two pounds of ground beef. Make sure to taste the meatloaf before you add the top layer of ketchup.I ended up scraping it off because the meatloaf was so darn tasty that it didn't need ketchup! (The ketchup didn't enhance the overall flavor, it just covered it up.) My kids even asked for seconds!

Fish in Foil

Reviewed: Jun. 3, 2006
This is a good basic recipe for trout. I cooked mine for 12 minutes, and it turned out fine. It's a little on the bland side, I think it might be better with fresh garlic instead of garlic salt.

Skillet Zucchini

Reviewed: Jun. 3, 2006
YUM! I didn't have tomatoes and used the remains of three different types of cheese and it still turned out great. My husband finished it off, and he doesn't even like zucchini!

Chicken with Asparagus and Roasted Red Peppers

Reviewed: Jun. 2, 2006
Surprisingly good! I used a full can of chicken broth, 2 garlic cloves, and 2 teaspoons of basalmic vinegar. I had to drain the broth before I added the cheese. The only thing I'll do different next time is that I will not salt the chicken. The dish is pretty salty already.

Creamy Spiced Coleslaw

Reviewed: Jun. 2, 2006
I substituted reduced fat mayo but otherwise followed the recipe. It turned out great! Be forewarned though, this coleslaw is not as sweet as other coleslaws. I served it with barbecue, and my husband and I felt like the coleslaw was not sweet enough to serve with spicy barbecue. I think it would go better with fish, fried chicken, or pork chops. It is still an excellent recipe though, and I plan to make it again.

Sarge's EZ Pulled Pork BBQ

Reviewed: Jun. 1, 2006
My husband said this is better than the pulled pork at our local barbecue restaurant. I used a pork shoulder roast and cut the fat off it before cooking. Based on the other reviews, I increased the coffee to 1 cup, used one 10 oz. can of double strength beef broth, and 1 1/2 tsp. of liquid smoke. It turned out great, but next time I think I'll use a less fatty cut of meat. I removed most of the visible fat, but the meat was still very rich (too rich for me, but not for my hubby). I served it with Trader Joe's barbecue sauce, rolls, and creamy spiced coleslaw (from allrecipes).

Hamburger Soup III

Reviewed: May 30, 2006
This is a great recipe! I wasn't sure if the tomatoes were supposed to be drained or not. I drained them, and the soup turned out well. I'll be making this again.

Frosty Strawberry Pie

Reviewed: May 29, 2006
I had something similar to this recipe as a child and I've been looking for it for years. The texture of jello and ice cream together was so unusual that I've always remembered it. This pie is pretty good, although my kids didn't like it. I made it with only 1 cup of water, and it firmed up quite nicely.

Broccoli Casserole

Reviewed: May 28, 2006
I chose this recipe because it uses sharp cheddar--my husband hates processed cheese. I used low fat cream of mushroom soup, reduced fat mayonnaise, and omitted the seasoning salt. It was delicious and was just salty enough. This is a great alternative to green bean casserole (as much as I love it, I do get tired of it).

Authentic German Potato Salad

Reviewed: May 28, 2006
This was excellent. I had to make this ahead of time, refrigerate it, then reheat it in the microwave. It tasted even better than serving it fresh! The flavors had a chance to meld together. I would make this again.

Wiener Schnitzel

Reviewed: May 28, 2006
I didn't care for this recipe.I felt like the bread crumbs could have used more seasoning. My husband, who is very picky, loved it (so I am giving it four stars). The addition of lemon juice did improve the taste.

Chicken Marsala

Reviewed: May 27, 2006
I made a lot of mistakes with this recipe and it was still delicious. I forgot to pound the chicken, I forgot to turn the chicken over while simmering, I used a good tasting "cooking marsala", and I didn't use cooking sherry at all (because I hate it). When it was done, a pool of oil, butter, and mushrooms was left in the pan. Is it supposed to thicken into sauce? I'm not sure--but I added some cornstarch and water and it thickened up nicely. It tasted very fine indeed! Even the kids liked the chicken, and they hate everything that doesn't come in a happy meal. This recipe is FOOLPROOF and even a careless cook like me can make a good meal with it.
