Cinnamon Rolls II

Excellent rolls! I let them rise for 2 hours, but they didn't grow much larger. I finally gave up and put them in the oven--they really puffed up there! I would recommend not using a dark pan. The sugar leaked out and burned. I used a white pan the second time and it was much better.

Pain de Campagne - Country French Bread

I gave this recipe five stars because the texture of the inside and outside is wonderful. The flavor is a little flat though. Some of the other reviewers suggested adding honey--I think that would improve the taste.

Walnut Sandwich Cookies

A complete disaster! My cookies flattened out in the oven and were really crispy and greasy. I thought maybe it might be the type of pan I used (I was using a baking stone) so I tried a regular cookie sheet, but I got the same results. I followed the recipe exactly, and I have no idea what went wrong.

Meatball Nirvana

This recipe is fantastic and can be made low fat by using 96% fat free ground beef. I like the fact that the meatballs are baked, which frees up the stove top for boiling the pasta and making the sauce. In the past, my stove top got a little too crowded!

Sweetheart Cupcakes

I am giving a 5 star review to the technique rather than to the actual recipe. I used a different cupcake recipe from this site based on what I had available. I followed the directions as written, and wound up with beautiful cupcakes. I like that you don't need any special cake-making equipment, just food coloring, two plastic bags, and a pair of scissors. I didn't even use a special tip for the bag, I just cut a hole in it and stuck it down into the batter.

Pastry for Double Pie-Crust

Foolproof! This was my first pie. I didn't have shortening so I used salted butter. I thought it would be too salty, but it actually contrasted nicely with the sweetness of the pie. I think I will use butter in the future, as I loved the taste. I also didn't have a pie pan--I used a 9 inch cake round. The pie looked a little weird, but tasted great.

Blueberry Pie

Oh my word! This recipe is outstanding. I had some not-so-fresh blueberries that tasted okay but had a squishy texture. I was worried about how they'd taste in a pie, but they were great. I followed the recipe as written, except I lowered the temperature to 375 and cooked the pie for 50 minutes. It was a little overcooked, next time I'll check it at 45 minutes. For the crust, I used the Pastry for Double Pie-Crust recipe and made a lattice top.

Herbed Cheese Omelet

Wow! I changed a few things to make it lighter, but I wanted everyone to know that this recipe works great either way. I used egg whites, light cheese, and cooking spray. The herbs are just right. You can taste them, but they do not overwhelm and they bring out the flavors of the eggs and the cheese.

Italian Chicken Skillet

Yummy! I realize that this is not the best review because I was out of two of the ingredients--spinach and mozzerella cheese. However, the dish was great without it and we were fighting over the leftovers. I can't wait to try it with spinach and cheese!

Ham Breakfast Braid

Very easy and good! I usually don't make stuff that uses refrigerator roll dough because I don't like it, but I have to say that refrigerator crescent rolls have come a long way since I last tried them 10 years ago. I added some chopped green onions for a little extra pep. I would definitely make this again.

We made these for the first time this Christmas and got a lot of requests for the recipe. We followed the recipe as written, but did not make the poppyseed ones (we don't like poppyseeds). The first time we made the walnut ones I used old honey that had partially crystallized. I used fresh honey in the second batch. The fresh honey ran all over the cookie sheet and made a mess in the oven. The crystallized honey stayed where it was supposed to--I'm using that next year too! The honey-walnut mixture has a taste similar to Greek baklava but not as sweet, and the cookie crust is to die for--buttery, flaky, and delicious. Don't skip the dusting in confectioner's sugar--the cookie needs the sweetness because the crust has no sugar in it.

Slow Cooker Beef Stroganoff I

I made this recipe as written, and it was pretty good, although a little bland for my tastes. The recipe is a great foundation though--the texture of the sauce and tenderness of the meat is right, it could just stand more seasoning. If I make this again, I will follow the advice of the other reviewers and possibly add some plain tomato sauce to add depth to the flavor.

Fresh Apple Cake

This cake was a hit with everyone. It's an unusual cake--a lot of "stuff" (apples, walnuts, and raisins) and the cake holds it all together, like a chunky fruit cake but much better. I followed the advice of other reviewers and used only 1 cup of oil. I didn't add any applesauce because I didn't have any. I cooked it in a 9 x 13 pan for 45-50 minutes, which I felt was a tad too long. I was waiting for the cake to pull away from the sides, but by the time that happened the cake was a little overdone. Next time I'll try 35-40 minutes and undercook it by a couple of minutes. Don't disgrace this cake with storebought icing--make your own! Cream Cheese Frosting II from this website goes great with this cake, only cut the amount of cream cheese in half.

Juicy Fruit Salad

This was pretty good, but nothing special. I was unclear about what to do with the orange. Oranges don't give juice unless you squeeze them, and squeezed oranges don't typically go into fruit salads. I just ended up not squeezing the orange and chopping it up for the salad.

These were pretty good. They are a little sweeter than I had hoped. My kids liked them. The recipe works fine as written, but I've tasted better rolls and will probably keep looking for the ultimate dinner roll recipe.

Roasted Garlic Mashed Potatoes

I made this for Christmas dinner and it was wonderful! I didn't follow the recipe exactly--I used all of the ingredients and went by how it tasted. I roasted two heads of garlic and used one and a half of them (more than what the recipe calls for).

Cream Cheese Frosting II

Following the advice of other reviewers, I only used half the amount of cream cheese (8 ounces). It was absolutely perfect, so creamy and much better than store-bought. I would suggest starting with 8 ounces and adding more, based on your personal tastes.
