Traditional Mashed Potatoes

Good recipe, I used half and half instead of milk and my potatoes were big so I kept adding butter and 1/2and1/2 until they looked creamy.

Brown Sugar Meatloaf

Oh my gosh! The best meatloaf ever! I also mixed up the ketchup and brown sugar and put it on top.UPDATE: I took the leftover meatloaf, sliced it and layed in a pan. Topped it with a drained can of green peas and topped them with 1/2 cup cheddar cheese. Topped that with leftover mashed potatoes and baked till potatoes were browned. WONDERFUL 2 great meals and it didn't seem like we were eating leftovers.

Cookie Pralines

Good recipe for people who love pecans! I was not sure how this would turn out but they are good. Very much like a praline candy. Easy to make and few ingredients. Also I used only 1/2 cup of the new Splenda brown sugar blend.

Shrimp Etoufee III

This was very very good! Next time I make it I will change a few things. It had way to much butter in it. I would make a roux to cook the onions, bell pepper and celery in then you would not need the cornstarch. And with the roux you don't need 2 sticks of butter.

Mexican Casserole

This was good, it's an open bean burrito more or less. I used the whole onion and cooked it in a little butter, then added the beans and salsa. Then made layers of tortilla, bean mixture and cheese. Also threw in some jalapenos. This could be added to with ground beef, corn, black beans etc. But with just this basic recipe it was good, and each bite was better and better.

Five Bean Casserole

This one was very different from anything I've fixed before. It tasted ok. Don't know if I would fix it again. It didn't have the "Wow thats good" and nobody wanted the recipe, which is how I know if my family likes it.

Awesome Broccoli-Cheese Casserole

Fixed this for Easter lunch and was very disappointed. It tasted ok I guess but it did not look like something you would want to eat. The egg or mayo or something looked like it was curdled. No one was asking me for this recipe. I'll have to keep looking for a broccoli recipe.

Basic Baked Spaghetti

So this is just what it says, basic, you need to add seasoning, onions etc. I do like the idea of the recipe and the basic recipe is not bad. I put a 26 oz can of sauce instead of the 16 oz and I still think it could use more sauce. I put the spaghetti in a 9x13 pan and poured the sauce mixture over the top and sprinkled the top with the cheese. Also added 3/4 cup shredded parmesan on top. I'll make this again and just perk it up a bit with onion, garlic, seasonings.

Fresh Southern Peach Cobbler

I used 4 cans of sliced peaches drained, instead of the fresh. And doubled the flour topping because I was making it in a 9x13 dish. I got mixed up when the directions said 1/4 tsp cinnamon, nutmeg, lemon juice and cornstarch. The nutmeg was 1/8 tsp so I had to much! And the cornstarch was 2 tsp, so I had to little! Make sure you follow the ingredients and not the directions.

Sorta Salisbury Steak

This didn't "WOW" me but my hubby liked it. I seasoned the meat with cajun seasoning and onion powder before browning. I also added a can of mushrooms and used 2 onions. I think it would be better over mashed potatoes (we had it over pasta)I may try it again because I like the part of putting it in the oven for 2 hours to get it tender.

Potluck Chicken Casserole

I like this! I would use a whole onion instead of the 3 Tbsp. and I didn't think it needed the crushed cornflakes. I think it was a little dry but I will make it again. I would recommend this recipe and think it would be perfect for potluck at church.

Mexican Shepherd's Pie

Yum! Loved this. I made it in the 9x13 and doubled the cornbread as reviews suggested. Also put 1 1/2 cups cheese on top of meat/corn layers. Next time I may put 2 cans of corn and maybe go with 2 lbs of ground beef. Don't feel like it really needed the black olives.

Cornbread Salad

This is so good! We will have this with our Easter meal. Only change is reduce the can of green chilies to the small 4 oz size and put 2 cans of whole corn. It was perfect and everyone who taste it wants the recipe.

Cajun Chicken Lasagna

Yummy.. This won $400 in a pasta bakes category in 2001 (Better homes and Garden)I only needed about 9 noodles for a 9x13 pan and used 3 tsp cajun seasoning with only 1/4 tsp sage. Also used 2 jars (15 oz each) Bertolli alfredo sauce. True cajun flavor!
