Souper Skillet Pasta

Reviewed: Mar. 16, 2009
I just love this! It's like a healthier, home-made version of hamburger helper. After I started it, I realized I had no canned tomatoes, so I sliced up a large fresh one and threw in an extra cup of water. I thought this might make it taste "plain" but it still had loads of flavour! I also used the cheese I had on hand, which happened to be Havarti and Cheddar. This will definitely be a regular in my household!

Chinese Chicken Fried Rice II

Reviewed: Dec. 10, 2011
If I had known how easy it was to make delicious fried rice, I would have been doing it long ago! This was actually my first attempt at fried rice, and this is my new go-to recipe for it! Just so good :)

Quick Chili I

Reviewed: Dec. 13, 2008
This was amazing! I tweaked it a bit, adding two packets of El Paso Chili seasoning instead of the spices listed, some Italian seasoning, and a bunch of chopped celery. Other then that, I stuck right to the recipe. And what a fantastic recipe! I will definitely be using this to make chili again and again.

Belle and Chron's Spinach and Mushroom Quiche

Reviewed: Jun. 16, 2009
I had to make this into a crustless quiche because I didn't have a pie pan. Also, I sauteed the mushrooms and spinach first because I wasn't sure how it would turn out throwing them in raw. But this was phenomenal! We are a quiche loving family, and it was so nice to be able to make it at home. Not nearly as difficult as I thought it would be either.

Basic Baked Spaghetti

Reviewed: Sep. 8, 2008
This was a very delicious starter recipe. I threw in an onion and garlic salt with the ground beef. I also put two different cheeses on top. It turned out really delicious, and it's easy to make lot's so you can make ahead and freeze.

This was so delicious! I used a 9 ounce can of orange juice and 2 teaspoons of maple syrup because that is what I had on hand.

This was absolutely delicious! I am making this again tonight, but subbing soy milk for the milk because DH is lactose intolerant.

Honey Curried Chicken

Reviewed: Jan. 26, 2012
This was SO delicious! I prepared it exactly as written (minus mushrooms because I didn't have any), and I loved it just like that. However, my husband said he prefers more curry and less honey, but he still liked it.

Peach Cobbler II

Reviewed: Aug. 17, 2008
What a delicious recipe! I took people's advice and doubled the peaches and cut back on the sugar, and I am glad I did. I think next time I may add even more peaches, as I found it was still not quite enough. I put 1 cup of sugar with the peaches and 1 cup with the batter, and that seemed just right. Very delicious!! I think this will be my staple peach cobbler recipe from now on.

Rice & Beans (Haitian Style)

Reviewed: Mar. 11, 2009
Hands down the best rice & beans I've ever tasted. I didn't have the pepper, so I subbed a tiny bit of chili flakes. I also threw in a bunch of chopped celery. I only used 4 cups of water instead of 5, and it came out just wonderfully...not sure if it was supposed to be more "moist"? Anyways it was fabulous and seasoned excellently, will definitely make this again.

Asparagus Supreme

Reviewed: Nov. 30, 2008
I am so glad I tried this recipe! Like many others, I used fresh asparagus. I omitted the chicken and substituted the red pepper for a broccoli head. I didn't think I would like the mayo in it, but it actually gives it a very pleasant taste. This is a quick recipe to make, especially if you do all the prep work ahead of time. And the best is that my son didn't even realize he was eating vegetables until he was almost finished his meal!! I will definitely make this again.

Slow Cooker Pork Chops II

This was delicious! The only change I made was substituting 1 tablespoon of pork rub for the poultry seasoning. I love slow cooker recipes, and this one did not fail me!

Banana Oatmeal Cookies III

Very easy to make cookies. And they were so good that my husband and his friend ate a whole batch in one day! His friend also told me that he would buy all the ingredients so I could make enough cookies to last a year. :)

Broccoli Sausage Breakfast Bake

Reviewed: May 7, 2011
I didn't have all the ingredients on hand, so I did change it a bit. I used hot dogs instead of sausage and frozen instead of fresh broccoli. Was still very good though, and easy to make too.

Double-Crust Potato Pie

Reviewed: Nov. 13, 2010
I was looking for a recipe to use up some potatoes and a bit of leftover chicken and decided to give this one a try. It looked good on paper and it tastes good in my mouth! I did have to modify as I only had one pie crust, so I threw some shredded cheese on top and as I mentioned I put some leftover chicken in with the potato filling. Delish!
