Turkey and Quinoa Meatloaf

Loved it. The quinoa gives the meatloaf a really nice, light texture. I agree that the 1 Tbsp of hot pepper sauce seemed a bit much, so I reduced it to 1 tsp. More would have made it too spicy for my kids.

Stuffed Shells III

Delicious! I did make a few changes, however: 1. I halved the recipe, but used a full 24 oz jar of sauce. It was a little too much sauce, but I prefer it that way rather than too dry. 2. Used fresh parsley (about 3 Tbsp for half recipe) 3. I sauteed the mushrooms before mixing them with the sauce to get them to release some of their moisture. I didn't want the sauce to get too watery. 4. Spread a thin layer of sauce on the bottom of the baking dish to prevent the shells from sticking.

Maple Glazed Ribs

These were awesome! I made ahead for a camping trip and marinated them for a couple days. By the time we grilled them, they were incredible! I wouldn't change a thing.

Party-Size Greek Couscous Salad

I've made this three times, and it has had rave reviews every time. Just be sure to use Kalamata olives, I used regular canned sliced black olives and it was definitely not as good.

Mother-in-law Chicken Soup

I was very pleasantly surprised by this recipe. It seemed too easy to be this good. I had planned on roasting a chicken and then adding it to broth with veggies and rice, but this was so much simpler...and my picky five year old loved it!

Nice easy recipe. I like the depth of flavor that the vegetable broth adds. A nice change from chicken-only broth. I used roasted chicken from "Juicy Roasted Chicken".

Beef Barley Vegetable Soup

Delicious! I followed other reviewers' advice and cut up the meat into bite size pieces and added the meat and all ingredients except the barley to the crockpot for 8-10 hours. I added 1/2 cup pearled barley (not quick-cooking) about 1 hour before serving.
