Southwestern Egg Rolls
My DH swore with his first bite, I thought maybe he bit his tongue- but no. You know how profanities can slip out in a moment of bliss. Im not kidding, this may have been one of the best dinners I ever cooked. I used soft taco size tortillas (made 6 eggrolls) and served with a lowfat sauce (1 c plain yogurt, dashes of garlic powder, salt, pepper, tbl ranch, tbl mayo, chopped cilantro). Baking was a delicious way to cook these, and I don't think anything was lost except fat. These were just amazing. Had carrot sticks on the side since the sauce was so delicious.

Grandma Johnson's Scones
Pretty good. Not AMAZING, although I think that had to do with me. I had a messy sticky dough and I was stressed out that I was over working it. Some of the other reviewrs said to add more sugar- DO NOT. I did one and a quarter cup sugar and it was really sweet. Tasty, but too sweet for a scone if you ask me. And I used quarter teasp lemon juice instead of cream of tarter. Once the dough was workable I rolled it out into a quarter inch sheet, cut it into rectangles, put a couple fresh rasberries inside and folded it over (potsticker style) and pinched the edges closed. Its really tasty that way. Finished scone was tender even if I did work the dough to death.

Zucchini Brownies
I loved these, and so did everyone else. I only had a 8x8 pan which made the edges of my brownies over cooked and the middle a little gooey. But after cutting off the edges these were perfect! Chocolatey, dense, and chewy. The only subsitution I made was 1/2 oil 1/4 applesauce and I added a cup of chocolate chips, which I recomend. Great recipe.
