Mushroom Pie

I have a very similar recipe and use fresh morel mushrooms when around in the spring instead of buttons. It is to die for! I have used buttons and it just isn't the same, but still very good. Fresh morels are hard to come by so use what you have. I am planning on making with a combination of buttons and adding some of my dried morels to add that special flavor.

Seared Sea Scallops

This recipe is a good way to cover the delicate, delicious flavor of sea scallops. I had a couple pounds of jumbo Alaskan sea scallops and used this recipe, really disappointed in it. This would be fine for a stronger tasting fish. A little olive oil, butter, garlic, salt and pepper is all that you need to do a wonderful seared sea scallop.

Maryland Pumpkin Seeds

This is a good seasoning for pumpkin seeds. Although they have more flavor if you don't rinse them. Just clean them as best you can, allow to almost dry. I use a couple tablespoons of butter instead of spray. Also, saw a reviewer trying to separate the seeds from the shell. Just pop em in your mouth, no need to remove the shell!

Garlic Chicken Fragrant Rice On a Budget

Fresh Tomato Salsa

Great salsa! Sorreno peppers are a nice touch w/ great flavor. Also added garlic and a halapeno. Another reviewer stated that it was too spicy, but they ate habaneros every day. I doubt it. Sorrenos are much much milder that hab's.

Exquisite Pizza Sauce

As of right now the sauce is still in the pan, but GREAT flavor! Can't wait for the zaa. I don't like sauces to sweet so I cut the honey in half. And a touch more herbs than instructed. Awesome pizza sauce!

Beer Batter Fish Fillets

Excellent. Used 1/2c more flour and 1/4tsp more baking powder as suggested. Have used it on smelt, walleye, perch and onion. All fried up very well and tasted great. Never have been a big fan of beer batter until this one.

Simple Garlic and Basil Pesto

Made this once as directed but minus the chili powder. Thought it was good but too sharp from the parm. Made it again using mostly romano and a little parm instead and it was excellent!! Also toasted the pine nuts, added a little salt and lemon juice.

Excellent!!! Did mine on the grill. High heat then indirect cooking for remainder. I used kosher salt. Must start with the best meat your butcher can cut for you.

Shrimp and Mushroom Linguini with Creamy Cheese Herb Sauce

Excellent, but I have a tough grading scale. Only gets a 5 if I don't have to change anything. I did this one as recommended. And then modified the second. Used 1lb raw devained shell-on shrimp, cooked in a bit of white whine then peeled before adding to sauce. Also used dried morel mushrooms. Added 1/2 cup of white wine instead of water. 5 ounces of cream cheese. Used fresh basil and extra garlic(always). Added green onions,cracked pepper and 1/4 cup of parmesian 5 minutes before serving. Also excellent with grilled then sliced pork tenderloin!!!
