Pumpkin Chocolate Chip Cookies I

These are awesome! I make these every year around this time,they are my husbands absolute favorite! I make a few changes due to personal taste though. I use 1 1/2 cups pure pumpkin, and I use 1/2 cup butter plus 6 T. water instead of the shortening. I also like a bit more of the spicy flavor so I use 2 tsp. pumpkin pie spice instead of the called for spices. You could even add another 1/2 to 1 tsp for an extra kick. I also use 3/4 cup white sugar and 3/4 cup brown sugar. I use 1 cup chopped walnuts and 1 whole bag of chocolate chunks. Basically just added more of the yummy stuff!DELICIOUS! Baked Pineapple

These were good.My 5 year old daughters both loved them which is saying alot. Nobody else though raved about them. I have had a similar version of this recipe before omitting the crackers and I liked it better. I also had used tidbits as suggested but I think chunks would have been better. Still good though,just not a favorite.

Hot Spiced Cranberry Cider

So delicious. Warms the soul. The combination of flavors is wonderful. It was the perfect Christmas cider. Will make this every year from now on.

Slow Cooker Mashed Potatoes

These are delicious! My whole family raved over these at Christmas dinner,even my sister-in-law who doesnt like mashed potatoes. I will now make these everytime I make mashed potatoes from scratch. I did use light sour cream,light cream cheese AND light butter and they were INCREDIBLE. True comfort food. The best! Thanks for the recipe!

Baked Corn

This is to die for. I make the same one with a few little changes,I add a full cup of sour cream and 2 pkgs of corn bread mix. I also cover the top with sharp cheddar to make it even more indulgent. I make this only on holidays specifically because I will over the course of a few days,polish this whole dish off. There is no better comfort food than this "spoon cornbread".

Hot Artichoke and Spinach Dip II

I think this recipe was decent but if seemed as if something was missing. It seemed kind of dry,if that makes sense.It wasnt as creamy as I would have preferred it to be. BUT...my dad who hates artichokes AND spinach tried it and liked it so go figure! Maybe my taste buds were just having an off day. I would probably try and make it again,just maybe add more mayo or something,and maybe cut down the cooking time a bit.
