Chocolate-Filled Crinkles

I made these for a Christmas cookie exchange b/c I was looking for something different and they were a hit! I left out the nuts and coconut in the filling, added about a quarter cup of peanut butter, and used only 1 teaspoon of milk. I doubled the recipe, but you really don't need to double the filling--I had a lot left over! Refrigerating the dough for about 10 minutes helps with the rolling. Also, it's helpful to dip the end of the spoon in flour before making the indentations in the cookie. I think I'm going to try rolling these in confectioner's sugar (like a traditional crinkle) before filling next time, and I'm excited to try different fillings!!

Pumpkin Chocolate Chip Cookies III

I prefer these with butterscotch chips and pecans, but my husband loves them with chocolate chips so I split the batch and do both. I also use 1 1/2 tsp pumpkin pie spice plus 1/2-1tsp cinnamon. It my oven 360 degrees for 12 minutes works best, but that will be different for everyone. Just make sure you take them out when they are nice and soft still!

Marshmallow and Lime Gelatin Salad

I want to love this recipe and taste-wise I do, but it's been so frustrating! Turns out so soupy which isn't appetizing. I've tried so many changes after the original didn't work AT ALL and this is what's been best: Used a little less soda (5-6 ounces), mixed in softened cream cheese and jello when marshmallow mix was still hot. Added pineapple (drained well) after I chilled for about an hour. I've been so busy adjusting for texture I haven't even tried different flavors but I may try that next.

Apple Crisp II

Wow is this good! Per many reviews, I added 1/4c water, doubled the topping and cut in the butter cold rather than melting. Also added 1 c chopped pecans to the topping which is a must if you like nuts! I used both quick cooking and regular rolled oats and it worked fine!!

Guacamole

Unless you're serving this as a main dish (does anyone do that??) this serves more than 4 people--closer to 8 I'd say. It was a little too lime-y for us, but I can get a lot of juice out of 1 lime. I used red onion b/c we prefer that flavor in raw onions and b/c it makes the dish even more colorful! With those small changes this will be my go-to guac. recipe.

Chicken Souvlaki Gyro Style

Better than our local restaurant's chicken gyros according to my father and husband! Used a bit more garlic and a bit less dill. Most importantly, I used fresh, homemade pita bread--makes all the difference in the world and isn't that hard to make. So much softer and tastier than store bought--take the time to make your own!!

Chicken Tikka Masala

Wow, the chicken in this was AMAZING! Moist and flavorful. I almost didn't want to put the sauce over it, but I'm glad I did because it was yummy, too. Served over whole wheat couscous.

Strawberry/Rhubarb Crumb Pie

I have to admit this pie was yummy, but it was so runny! I was embarassed when I cut it open and liquid just started pouring out. I may try to play around with the recipe to fix that problem, but I love the strawberry rhubarb crunch recipe from this site so much, I'm not sure I'll try this one again.

No Bake Peanut Butter Pie

As written the recipe was not amazing for us. Yummy, but we've had other frozen desserts that we've liked better. I think I'll play with the ingredients a bit and use this as a base.

Rhubarb Strawberry Jam

As long as you cut back on the sugar a bit (I used 2/3 the amount) this is a five star recipe. It is soooo easy and a great way to use that rhubarb without making another pie/crisp.

Creamy Au Gratin Potatoes

These were good. Definitely worth making as opposed to using those dried/packaged au gratin potatoes. But something was missing for me. I think I'll try to add some sour cream or chives (or both!) in and see if I get that "wow" factor the next time.

Award Winning Soft Chocolate Chip Cookies

If you're not typically a great cookie maker (that's me!) TRY THIS RECIPE! I swear it's as close to no-fail as baked cookies can get. I follow the recipe exactly, but do allow the butter/eggs to get room temp as suggested by many other reviewers. I also make mine pretty big (~1/4 cup dough) so they take about 13 minutes.

Ice Cream Sandwich Desserts

I was tempted to give this 4 stars because I was frustrated that it took more ice cream sandwiches than stated, but it was so good I can't help but give it 5! Definitely need at least 24 sandwiches, though! I did sandwiches, caramel, peanutes, cool whip, sandwiches, hot fudge, cool whip, peanuts as suggested by another reviewer. EVERYONE wanted the recipe!

Grilled Salmon I

Wow! My husband and I went to an upscale Japanese restaurant in Milwaukee and I swear I had this same recipe salmon--it's amazing! I followed the ingredients exactly, but changed the cooking method a bit. Since we have never properly seasoned our grill, I cooked this in a foil packet with a lot of the marinade and it was SOOO flavorful and tender. I never flipped it and it took about 15-20 minutes over med-high heat and it didn't dry out at all (I had about 1 1/2 lbs I think).

Chocolate-Peanut Butter Bonbons

These were...interesting. The cookies helped to keep your hands clean while eating them, but didn't add much to the dessert itself. The chocolate pudding part was not very flavorful--it was a little understated next to the chocolate and peanuts. If I tried these again, I might add more cream cheese-maybe even double it. For all the effort (I have two little ones-anything over one step is effort!) I'm not sure I'd do them again. They were good, not great. **Update: Originally rated 3 stars, I had to up this to 4 stars b/c I got so many compliments on them. So better than I thought, but still a lot of work.

Banana Sour Cream Bread

Mine ended up pretty flat, but the taste was amazing anyways! I used half brown sugar because I ran out of white (who runs out of white sugar??) and I added chopped rhubarb instead of nuts b/c I have tons to use up.....sooooo yummy!

Irish Soda Bread Cookies

I thought these would be okay as an addition to my st patty's day meal, but ended up really liking them! I left out the caraway seeds, topping half of the cookies with them before baking and I used a mix of golden raisins and cranberries.
