Funky Frito Fruckies

incredibly delicious blend of flavors! I made it as written the first time, loved it - then followed a suggestion about adding 1/4 C more corn syrup & peanut butter each, and I also melted the peanut butter in the microwave, to make stirring-in faster - and it seems like these changes made it easier to work with. GREAT RECIPE!

Mom's Country Gravy

Great recipe with easy to understand instructions! I followed other readers' advice and used butter instead of oil - adding enough butter to fill my 1/2 cup about 2/3 full, then filled cup the rest of the way with bacon grease. Very rich!

Texas Brownies II

Definitely a cake - not a brownie, tho i think the size & richness qualifies this to be called Texas Brownies! Speaking of size - this recipe made TWO jelly roll pans (so i doubled the frosting) - i was afraid of a big mess if i only used one pan. So wonderful & made enough to share with friends & freeze some for later!

Buffalo Chicken Wing Soup

Very easy & delicious! I added 1/2 cup buffalo wing sauce & 1/2 cup hot sauce - it will make you sweat!! Wonderful for the sinuses!!

Meatloaf with a Ranch Twist

Very moist meatloaf! Instead of the usual loaf pan (and to stretch it out) i spread it into a 13x9 casserole dish - and cooked it for 40 minutes. I also used 1# lean ground beef & 19 oz lean ground turkey - couldn't tell the difference! Love the added ranch!

Butterscotch Fudge

So easy & very tasty! I used butter flavoring & vanilla extract because I didn't have the rum. I made this a 2nd time with peanut butter morsels instead of the vanilla - DIVINE!

Delicious Chicken Casserole

Great recipe! I lower the fat in anything I make, so here's what I did with this one: used boneless skinless breasts, fat free sour cream, low-fat/low-sodium cream of chicken & reduced fat Ritz crackers. With these changes I was okay with the butter, because there is no good substitute. I am not a celery fan - so I skipped it. Great!

Charleston Breakfast Casserole

What a fabulous idea using croutons! I only had 1 1/2 cups of croutons - so i added 4 slices of toast, scissor-cut into squares. I also added a few extra eggs, cheese & milk to stretch it for my large family, and made it in the morning for a "breakfast for dinner" meal. GREAT!

Zesty Slow Cooker Chicken Barbecue

Excellent recipe and so easy to throw together! I thickened the sauce so it would stay with the chicken on the ciabatta rolls, and served with sliced onions & sliced cheese. Low fat and delicious!

Zucchini Brownies

I wish I could give more than 5 stars! EXCELLENT recipe as is - I went for less fat by substituting the oil with applesauce, added some ground flax seed for health, and doubled the zucchini. I will never again cringe when a friend unloads extra zucchini on me!!

Roasted Tomato Salsa II

Charring the veggies gives a fabulous smokey flavor! I used a container of grape tomatoes & broiled them whole. I didn't have the extra sauces - so i added fresh jalapeno. It was even better the next day!

Brunch Enchiladas

This was fabulous! I tweaked the recipe to be more low-fat: low-fat tortillas, 1/2 lb low-fat ham, 1 cup egg-substitute plus 2 eggs, fat-free half & half, 1/2 lb low-fat turkey sausage, skim milk...I added salt, black pepper, onions (sautéing them with the sausage), and used a small chopped orange sweet pepper in place of the green pepper. Next time I'll switch out the cheese for reduced-fat! Excellent served with salsa!!
