Bacon Risotto

This was DEEElish! I accidentally ended up cooking the garlic and onions a little too long so they were carmelized - which turned out really good. I think it probably added a lot of flavor. I also added 3/4 cup cheese instead of 1/4 because we love cheese. Didn't add the egg at the end. Thanks so much for the recipe. It will be a keeper!

Creamy Au Gratin Potatoes

REALLY good! I had about 1/4 cup of heavy cream and about 1 cup of fat free half and half so I used that and 3/4 cups skim milk. Not sure if it made any difference, but wanted to use the cream and 1/2 and 1/2 before it expired. I did use a little more cheese than the recipe called for and I even sprinkled some on top for the last 10 minutes of cooking. Also added a little salt and a little pepper. The one other thing I did differently was to use a bag of Simply Potatoes brand "homestyle slices" since I had some on hand. OH! and I left out the onions because they don't agree with a member of the family. GREAT comfort food!

This was just ok even though I REALLY wanted to love it like most of the other reviewers. I think maybe the combination of the lemon juice and the cheese just didn't do it for me. I will use the basic gist of the recipe again but will use either the lemon juice OR the cheese and I will add more garlic and some red pepper flakes. Might skip the breadcrumbs too - they just weren't necessary and didn't add much to the dish other than calories.

Shredded Beef Enchiladas

This was soooo good! And, yes, it's a fairly long time from start to finish, but most of the time the roast is simmering in the pot so it's not like you are busy preparing this dish for hours. The meat was amazing! And the sour cream/cheese mixture was delicious too. I did change it up a little by using flour tortillas that I did not soften in the oil. I also added a half can of drained black beans to the cheese/ sour cream mix and I used a couple of cans of Enchilada sauce. I poured a little sauce in the bottom of the baking dish, then added the enchiladas then poured the remaining enchilada sauce over everything before topping with cheese. REALLY great recipe - as good or better than any enchilada/ burrito I've had in any Mexican restaurant.

Triple-Cheese Macaroni

American Shepherd's Pie

This was a good Shepherd's pie recipe. Not great- but solidly "good". My son, however, loved it and is begging me to make it again. I think maybe adding some minced garlic would liven it up a bit. Of course, I add garlic to almost anything. THanks for sharing. I'll be making this again.

Italian Chicken Bow Tie Pasta

I was really looking forward to trying out this recipe - after all, it was so easy and had such great reviews. I followed other reviewers' suggestions and sauteed the chicken pieces in olive oil with garlic. Then I spiced it up a bit because it was so bland. I added fresh basil, more minced garlic, italian seasoning, salt and pepper. It's better with the additions - but still - it's just okay at best. Think I'll stick with the boxed pasta salad mixes from now on.

Delicious Chicken Casserole

I'm sorry, but I just don't get all the rave reviews. I love all types of chicken and rice dishes and this was too soupy until I read some reviews and decided to add another 3 cups of cooked rice along with 2 cans of Ro-tel tomatoes since I was short on time and on hand ingredients. It was really bland at first not colorful at all. I'll probably end up eating it as will my children since we're not picky eaters, but I'm betting that once my husband gets home he will take one bite and order a pizza.

Slow Cooker London Broil

LOVED it!! I used a london broil as the name of the recipe suggests rather than a flank steak in the ingredients list. I cooked it on low for 8 or 9 hours and it was fabulous! I have never had such a tender london broil. It literally fell apart it was so tender!! I added some Worcestershire sauce as one reviewer suggested, and I also sprinkled some onion powder and garlic powder over the top. This is a keeper!!

Simple Slow Cooker Meatloaf

I love the convenience of slow cookers and I've always loved meatloaf. I guess I'm more of a meatloaf purist or something because I just didn't care for the taste with the sausage in it. And it was VERY greasy. If it had cheese in it, it would have tasted like the Bob Evans sausage balls.

Uncooked Banana Pudding

As much as I hate to admit it, my family declared this the best banana pudding I've ever made. I have always cooked a banana pudding on a hot stove, with no pudding-mix-shortcuts, stirring constantly - thinking that was the only way to make a really good banana pudding. How wrong I was. This was delicious. Much lighter and more refreshing than the thick custard type puddings. We polished the whole thing off in one sitting and the kids immediately begged me to make another! Thanks, LeAnne - this is a terrific pudding!

Grecian Pork Tenderloin

Wow! Absolutely delicious. I baked in the oven as other reviewers had done. Turned out perfectly! The only change I made was to add about 1/2 to 1 tsp. of sugar, and about the same amount of garlic powder. The marinade is addictive! I can't wait to try it out on chicken and maybe even fish! A definite keeper.

Barlow's Blackened Catfish

This was excellent! I cut the salt in half as some reveiwers recommended and I'm glad I did. I also had to cut the red pepper in half since some members of the family can't take the heat! I happen to love salmon so I had purchased a big filet for myself instead of the catfish the rest of the family wanted. I decided to prepare my salmon filet the same way I was doing to catfish just to make life easier. OH MY GOSH!! It was AMAZING! Even better than the catfish. I shared a few bites with the rest of the family and it was a HUGE hit!! Thanks for a terrific way to prepare fish, Jeff!!

Slow Cooker Pulled Pork

I was looking for something I could cook in the crock pot on a very busy day. I was tired of the usual pot roast, and we have chicken all the time so,the idea of pulled pork occured to me. I tweaked this reciped just a bit and the result was really good! I knew a 2 lb tenderloin would never be enough for my family of 6, so on the advice of the butcher at my grocery store, I used a 4 lb shoulder (it had a small bone in it, but it slid out easily after cooking on low for 10 hours. I mixed 1/2 cup of Bull's Eye Original Barbeque sauce with 2 cups of root beer then poured it over the roast, sprinkled it with a generous amount of dried minced onion, then drizzled some additional barbeque sauce over the roast. Halfway through cooking, I turned the roast over, added more minced onions and another drizzle of sauce. After 10 hours in the crock, I removed the roast, let cool slightly and then shredded it. I mixed in the rest of the barbeque sauce, some salt and a little water to moisten it and served it on a bun. The result was a restuarant quality pulled pork sandwich that my whole family enjoyed! I will definitely be making this again!

Bow Ties with Sausage, Tomatoes and Cream

One word for this recipe: YUM!! Not a complaint from anyone in my family and THAT is a rare thing indeed! Even my pickiest pasta eater who only likes angel hair pasta noodles and even then only with butter and parmesan cheese ate it without complaint! I used a 15 ounce can of diced tomatoes (drained), and a 14-1/2 ounce can of tomato sauce since I had a lot on hand. I also substituted half of the heavy cream for fat free half and half. I added about a half teaspoon of oregano, 1/2 tsp garlic powder and a 1/2 teaspoon of dried basil. The ONLY problem with this recipe is that I can't stop eating it!! This is a keeper!
