German Apple Cake I
I have made this twice already. I use 4 peeled and diced apples and I substitute applesauce for the oil. I just used the apples I had on hand. Gala and Rome. Everyone loved it! It doesn't last long. I agree that it does get very "moist" the second day. It must have something to do with the water content in the apples. No matter. It's still delicious.

Poor Man's Sandwich
I made this today using egg bread. Excellent. The tanginess of the vinegar in the pickle and the crunch of the cucumber and onion were perfect against the peanut butter and mayo. I will totally make this again and again.

Oven Fried Parmesan Chicken
This was fantastic! Made this tonite (didn't have parsley) and it was really good. I used bone-in chicken breasts and they remained moist and flavorful. For those of you who haven't gotten your chicken to crisp, just put it under the broiler for the last 2 or 3 minutes. Crispy and brown on the outside, moist and juicy on the inside. Excellent! The butter really added a lot of flavor.
