Basil Chicken over Angel Hair

This is good, but I can't drink too much of it at once. It would be great for someone who is sick. Very strong flavor, but the butter adds the perfect touch.

Bob's Awesome Lasagna

A great classic lasagna that has been added to my rotation of meals. I often use ground Italian sausage for extra flavor and extra mozzarella cheese. Because really, the best part of lasagna is the cheese!

Tuscan Soup

Loved it! I used ground Italian sausage instead of links and additional potatoes and broth to increase the servings for a larger crowd. It's good both with and without evaporated milk (I use fat free). Definitely a winter time staple!

Braised Balsamic Chicken

This is a quintessential Italian tasting dish. I cubed my chicken for faster cooking and ended up adding an extra can of drained diced tomatoes. I served it over a bed of polenta with sauteed zucchini on the side. Delicious!

Addictive Sweet Potato Burritos

Loved these! I used black beans instead of kidney beans and kept them somewhat whole to add texture. Next time I will try adding frozen corn for a bit of a contrasting crunch.

Sausage-Stuffed Eggplant

Very tasty! I added onions while browning the sausage and cut down the 2nd stage cooking time for the eggplant to only 10-15 minutes because the cheese was getting very brown. A tip to scoop out the insides: cut with a sharp knife the exact outline of where you want to scoop and then use a spoon to scoop out the flesh. It is much easier than only using a spoon.

Black Bean and Salsa Soup

This was good, but I added more ingredients to make it a heartier soup. I first sauteed red bell peppers with chopped garlic. I then added the recipe ingredients to the pan. Once they were heated through, I scooped half of the soup into a blender and blended until smooth. I poured the blended soup back into the pot and added frozen corn, chopped fresh cilantro, and the juice from one lime. It turned out deliciously chunky and flavorful.

Italian Sausage Soup

This soup was bursting with flavor! It turns out even more incredible when you add shredded Parmesean cheese at the end. Absolutely delicious and incredibly easy to make, this recipe will be made many more times.

Blue Cheese and Pear Tartlets

I couldn't find premade phylo shells and didn't have time to make some, so I used pie crust instead. I cut store bought crust into approx. 2 inch squares and pressed them into mini tart pans. I baked the pie crust for a little less time than the package called for then I put the filling into the hot pie crust and put it back into the oven for 5 more minutes. They came out bubbly and delicious and were gone within minutes at my party!
