Spinach and Leek White Bean Soup

Raspberry Cake

Like others said, this makes a moist, flavorful cake. The recipe makes great cupcakes, too. I made cupcakes by following the cake recipe exactly. For frosting, I used another cook's whipped cream frosting recipe (http://allrecipes.com/Recipe/Sturdy-Whipped-Cream-Frosting/Detail.aspx) and topped each cupcake with a raspberry. Mmm! :)

Marble Squares I

I thought this recipe turned out pretty good. The bars were a hit with my friends. :) On suggestion from the other reviewers, I used less (only 1/2 cup) of butter. This resulted in a less "bubbly" or "squishy" bar. Unlike other reviewers, I thought 3 minutes was plenty of time for the chocolate chips to melt. My advice is to check on them at 3 minutes. Poke a chip with a butter knife. If it's soft, it should marbleize just fine. If not, give it a little more time - not too much, or the bars will set. Also, I decided to sprinkle a 1/2 cup pecans over the bars after 10 minutes of baking because I like pecans in chocolate chip cookies. Finally, I lightly covered the pan with foil during the last three minutes of cook time because I noticed that the surface of the bars was cooking faster than the center. The bars turned out great. As you can see in the picture I posted, they look pretty too. :)

Cinnamon Raisin Bread I

This recipe was great! It had a nice texture and was plenty sweet enough. I'll definitely make this one again! :) The bread dough was pretty sticky for me after adding the recommended amount of flour. I added a little extra (about 2/3 cup) to stiffen it up. As other reviewers mentioned, the bread does brown really fast. I put foil lightly over my loaves at 30 minutes and continued baking it for the recommended time. It turned out great. Also, the ends of the loaves need to be really folded under. I just pinched them, and they unrolled during the second rising and baking. (The bread was still great regardless).

Roasted Green Chile Stew

I'm from Las Cruces, NM and was looking for a good green chile stew recipe. This one was great! Like other suggested, I used Bueno's roasted green chile instead of fresh roasted. I used 3 of the 13 oz tubs. I drained them before I added them Also, I omitted the serrano peppers.
