About this Cook
I am all about Mexican food and constantly try new items. I am also a small amount of N.W.Wa. Indian so I also have a very deep pride and love for their food. My Grandmother and my Mother are awesome bakers and cooks. Mom inspires me to be brave about implementing my own ideas.
My favorite things to cook
Did I say Mexican? I also seem to favor the all day slow cooking recipes. I work random days and somewhat random hours so I depend on thinking ahead and making stews, chilie, swiss steak, roasts of different sorts and what ever else that takes a good while.
My favorite family cooking traditions
Stollen, Fruit Breads, Enchiladas, Tamales, Beans and Rice at Christmas.
My cooking triumphs
Awesome Tamales on my first attempt, paella, Homemade refried beans, One time on a whim I made fried chicken and added cumin and cinnamon Oh my gosh!!!!
My cooking tragedies
For me to have the perfect loaf of home baked bread, it is imperative that I make it often or I lose my touch. I gifted my bread which had a wad of dough in the center. I have also gifted jars of jam that were runny too. Oh well, try, try again! I am sure their are a bazillion others..

Chef John's Easy Apple Pie
I especially loved the idea of the egg wash & the oven at 425 for 15 minuets and 350 for the last. Beautiful!! I especially loved the idea of egg wash and the higher heat of 425 for 15 minuets and lower heat for 30ish minuets. Beautiful!!!! I am excieted to try chef Johns pecan pie!

Spicy Black Bean Salad
I like to brown cumin in a skillet first and use fresh cooked or freezer corn. This dish is amazing w/ a chip, on fish, tacos, chicken or just by itself! Thank you for your share I lost my original recipe which was very similar.
