Parmesan Basil Biscuits

Reviewed: Jan. 8, 2010
Fantastic biscuits! I like that it calls for olive oil instead of butter. I used whole wheat flour instead of white and increased the baking powder by just a bit to compensate. I didn't have shredded Parmesan cheese so I used the grated kind that comes in the container. I also didn't have fresh basil so I used dried... non-measured... just what looked good to me. I will be making these again!

MullaKinVowles Soup

Reviewed: Jan. 4, 2010
So-so. I made this without the cauliflower (because I don't like it) and without broccoli (because I didn't have it). I felt like this soup was fine and I would eat it again, but not good enough to make again. Decent flavor. I liked having the curry flavor... kind of interesting. Just not interesting enough.

The Best Meatloaf I've Ever Made

Reviewed: Dec. 1, 2009
So good! I didn't have crackers or tomato sauce, so I just used enough bread to look good to me and squirted some ketchup both into the meatloaf then on top at the end.

Amazingly Easy Irish Soda Bread

I used half whole wheat flour and half white flour. It turned out great!

Simple Baked Apples

Reviewed: Nov. 20, 2009
Yummy! I used pecans instead of walnuts and used less than half the white sugar, then sprinkled a little brown sugar on top. So good. I will be making this again.

Spicy Rapid Roast Chicken

Reviewed: Oct. 27, 2009
Excellent! I made 1 1/2 times the seasoning, because it sounded so good. Normally I don't eat the skin, because I know it's healthier without, but it was so good... I ate the skin and some extra! I used a meat thermometer to check the temp, took it out at 165 degrees, and let it set in order to get up to 180 like recommended. Very moist inside and crispy outside. I cooked it breast side down, then turned it over the last 20 minutes to crisp it up. Fantastic! I will make this again!

Green Bean and Potato Salad

Reviewed: Oct. 11, 2009
Here's my prelimonary rating...4 stars I want to see how it is after the flavors blend... However, before I forget... here's how I made it. I doubled the potatoes and green beans, used only 1/4 of the raw onion (because we can't eat too much raw onion in my family), added 1/4 of a red pepper (that's all I had), and added some onion powder to compensate for using less raw onion. It looks like it will be good... I hope so, because I'm bringing it to a party tonight! :) Changing it to 5 stars.... excellent and I had a lot of people asking for the recipe!

Coffee Shop Corn Muffins

Reviewed: Sep. 23, 2009
Fantastic! My new favorite. Only one change... I substituted whole wheat flour for the white flour. It was so moist and had a nice sweet taste. I didn't even eat it with honey like I usually do!

Easy Granola Bars

Reviewed: Sep. 20, 2009
Fantastic! I used almost 4 cups of random dry stuff... chocolate chips, coconut, dried cherries, sunflower seeds, sliced almonds, wheat germ, puffed rice and marshmallows. I will definately make this again!

Horseradish Deviled Eggs

Reviewed: Aug. 29, 2009
Excellent! I will be making this again for sure! I only made one adjustment. My husband and I tried it with and without paprika sprinkled on top. Although we generally like paprika, we thought it made the flavor a little too busy. Better to just be able to taste the fantastic horseradish flavor! (It does look prettier with the paprika though.)

Mediterranean Chickpea Salad II

Reviewed: Aug. 13, 2009
I altered this a fair bit, and really liked it! 3 times the tomato, 1/2 the olive oil, no onion or parsley, added some cucumbers, fresh chives and onion powder. I used lemon juice from a bottle instead of freshly squeezed.

Thyme-Rubbed Steaks with Sauteed Mushrooms

Reviewed: Jul. 20, 2009
The spices are excellent. I rubbed them on the steak, then pan-fried them in canola oil. (I would have tried olive oil, but was out of it.) After the steaks were cooked, I removed them from the pan. I then added the mushrooms to the pan (without all the other ingredients). After the mushrooms were cooked, I put them on top of the steak. Very tasty. I think I will make up a big batch of the seasoning to have easily on hand for other times!

Multigrain Pancakes

Very good! I found that it needed additional liquid, so I added extra milk, yogurt, water and yogurt... I didn't measure how much extra I added. I also added 1/2 teaspoon of nutmet. I will definately make these again!

Spicy Black Bean Soup

Reviewed: May 13, 2009
Excellent! I will be making this again. Just a couple of small changes to the original recipe: made broth from a ham bone instead of using chicken broth; also, I saute'd onion in olive oil along with extra minced garlic and left out any dried garlic.

Quite good, but I felt it needed more seasoning. I think next time I will use more salt and pepper and add other seasonings as well.

Slow Cooker Pork Chops II

Reviewed: Mar. 13, 2009
Very good! I think I would cook for 8 hours on low instead of 4 on high next time to make them more tender. Excellent flavor and I really like the gravy on brown rice as well. I used 1 1/2 times the amount of water and half the olive oil. I didn't have any poultry seasoning so I left it out. I will definately make this again.

Bran Muffins III

Reviewed: Jul. 24, 2008
I really like this! I made it even a little healthier by using all whole wheat flour instead of some white flour. I added some wheat germ in place of a little of the flour. To help it rise well with all whole wheat flour, I used a little extra baking soda. I added some raisins... it was nice to add some sweetness. I don't think it needed any sugar added.
