Green Salad with Cranberry Vinaigrette

This is a great dressing! I used a little less garlic than called for, because I made a large batch and didn't want the garlic flavor to get too intense after a couple of days.

Banana Oatmeal Cookies III

I made these wheat-free by subbing 1/2 oat flour and 1/2 rice flour for the all-purpose flour and adding a little xanthum gum. (Not sure how much, off the top of my head.) I used butter instead of shortening. I slightly softened it, then mixed it with the sucanat with my mixer. I used Sucanat in place of white sugar and left out the walnuts due to allergies. I know this rating may not help others due to all my changes, but these cookies were really good!

Quinoa Black Bean Burgers

I already had quinoa made so I added 1/2 cup cooked quinoa plus 1/4 cup water to the other ingredients. I exchanged old-fashioned oats for the breadcrumbs. I baked them-first spraying my pan then the tops of the burgers. Very good!

Vegan Cupcakes

Delicious! I looked for a new recipe today, because I didn't have any eggs in the house. I subbed Sucanat (SUgar CAne NAtural) for the white sugar and whey (leftover from recently making yogurt) for the almond milk. The slight taste of coconut is wonderful. I will be making these again... soon!

Calico Beans

This was very good! I made several changes so I know it's hardly fair to rate it but here goes... I used one can of chili beans, one can of kidney beans, one can of black beans and one can of great northern beans. I sauteed the onion with the ground beef. I let the meat cook a little before I added the onion so I wouldn't need to add any oil for the onion. I only used 3/4 cup of sugar and eliminated the bacon. I'm sure the bacon would have put it over-the-top amazing, but I didn't want to bother to defrost a whole package from my freezer to use a little here. I will be making this again. Very tasty!!

Black Bean Vegetable Soup

I used ham broth and only used about half the amount called for. I shredded the carrots instead of dicing them, just for the consistency of it. I only had half the amount of corn on hand, but it was still very good!

Sister Schubert's® Sloppy Joes

My first time making sloppy joes and I will keep this as my go-to recipe. I subbed ground beef for the sirloin and only had apple cidar vinegar so I used that instead of regular vinegar. Very good!

Hummus III

Incredible! This is my first time making hummus, but I anticipate making it often now! I used dried, soaked, cooked chickpeas. Just a few minor adjustments: I used only 2 Tbsp. of tahini and 1/2 Tbsp. olive oil and added a little fresh red pepper. Everything else was the same. Super good!

Spinach and Mushroom Frittata

So good! I substituted one whole onion in place of the green onions then sauteed the onions with the mushrooms until soft. Other than that, I followed the directions exactly. It turned out fantastic!

Gingerbread Boy Cookies

Super good! I substituted 2/3 of the white flour with whole wheat flour. I didn't have white vinegar on hand so I tried apple cider vinegar. With all the other flavors in the cookie, I didn't even notice the difference. I didn't add any extra flour. After cooling in the fridge for a while though, the dough was perfect for rolling out. I made them kind of thick which made for a nice soft cookie! My little girls and I will be making these again!

Millet-Stuffed Peppers

I doubled everything except the black beans. I also sauteed about a pound of mild sausage along with 2 chopped onions, some minced garlic, cayenne pepper and black pepper and added it to everything else. I did not use any boullion cubes. I cut the peppers in half lengthwise and baked them in the oven at 350 degrees.

Banana Muffins II

So good! I made a few changes. Whole wheat flour instead of white, canola oil instead of butter and sucanat instead of regular sugar. I also added a bit of cinnamon. This is my new favorite banana muffin recipe!

Cranberry Orange Bread

I used all whole wheat flour in place of all purpose flour. I cut the sugar back to 2/3 cup instead of 1 cup and used brown sugar instead of white (just to give it a little more flavor). I substituted canola oil for the butter and left out the walnuts. I tripled the recipe and planned to make 3 loaves, but felt that they were kind of small so I made 2 loaves out of the triple batch. They turned out beautifully! Very tasty!

Lentils and Rice with Fried Onions (Mujadarrah)

I wanted to use brown rice, but knew it would take longer than white rice so I put it in the pot right away with the lentils. I kept needing to add water so it wouldn't burn before the rice was done cooking. Maybe next time I might start the rice first then add the lentils? I'm not really sure how much water is needed... trial and error so far. Based on some other reviews, I added cumin and garam masala. The onions were fantastic. Honestly, I made more onions more several times tonight before dinner because they were so good!

Jay's Signature Pizza Crust

Very good. I made exactly as instructed except for substituting freshly ground whole wheat flour instead of all-purpose flour. It turned out great. I made one batch for a very thick crusted pizza. I made a second batch into bread sticks. For the bread sticks, I rolled to dough out onto a rectangle shaped pan, brushed olive oil and sprinkled dried garlic on top, cut it into bread stick sized pieces with a pizza cutter then twisted each piece to make it look more interesting. I would make both the pizza and bread sticks again.

Beef Stew VI

So good! I plan to make this again next time I make stew! I left out the boullion (didn't have any) and the constarch (for allergy reasons). It was still fantastic! I let the beef simmer for an hour (as directed) then put all the the ingredients in. I then let it simmer for a good part of the afternoon. The beef was incredibly tender.

Honey Nut Granola

Very good! My daughter is allergic to nuts so I left out the almonds and pecans. Instead, I added 1 cup of sweetened shredded coconut, 1/4 cup of ground flax sead and 3/4 cup of assorted chopped dried berries. I usually like crunchy granola that clumps together. This came out kind of chewy and didn't really clump, but I still really liked it. I cooked it at 275 for 15-20 minutes, mixing once or twice.
