Mushroom Kabobs

This is my go to recipe for grilling vegetables, either as kabobs or in my veggie griller. I don't use peppers, instead I use zucchini and summer squash with the onions and mushrooms. I make it easier by mixing the marinade ingredients and pouring over the veggies and letting them marinate before I grill them. The flavor really gets into the the veggies this way.

Beer Brats

I've made this several times and love it. It is the only way I'll make brats now. If I have time, I'll let them soak overnight or at least a couple of hours. I don't bring them to a boil just a small simmer so that it doesn't take them as long to grill. I poke some holes in the brats so they really soak up the flavor. Yum!

Roquefort Pear Salad

One of my absolute favorite recipes. I make just two small changes. I used walnuts instead of pecans just because of the price and I omit the avocado. It's a delicious salad!

Jalapeno-Lime Marinated Chicken

This is one of my favorite ways to grill chicken. The only change I make is to use 2 jalapenos as I like it a bit spicier. I've tried it with both orange juice and concentrate and I definitely liked the concentrate better.

Double Chocolate Mocha Trifle

I have made this several times and have also been requested to make it. As someone else suggested, I use cheesecake flavor pudding and kahlua instead of coffee, it is so good.

Creamy Chicken Casserole

This is one of my favorite meals to throw together. I use french fried onions (I don't usually have chow mein, so I use what I have on hand.) I've also thrown in a can of peas for color. It goes fast in my house!

Braised Balsamic Chicken

I love this recipe. From the other recommendations, I use a bit less vinegar, 1/3 cup. It makes great leftovers, this one gets made a lot in the winter at my house.

Exquisite Pizza Sauce

I have made this several times with no changes (no anchovy paste) and it comes out great. I make extra and freeze it, it is always wonderful. I love the sweet and spicy elements.

The Real Mojito

I used simple sugar instead of table sugar because I was worried about it dissolving. Even using an equal amount of simple sugar it was a bit sweet, but still very good.

Creamy Butternut Squash and Apple Soup

I love this soup. I used 2 apples, chicken broth instead of water (and a bit less than it says). I didn't have fresh thyme, I used a small amount of cinnamon. I thought the almond milk gave it a nice richness and was still calorie friendly. I didn't puree it, just mashed it as I like a thicker soup. I will definitely make again.

Chicken and Pea Casserole

We make this recipe frequently in our house. My husband loves it. Its one of the few recipes that I make with no changes. The parmesan can be overwhelming for some people, if you want a milder flavor I would use a different white cheese. I've made this with both canned chicken and fresh shredded chicken and its good both ways.

Guacamole

I followed this recipe pretty closely. I added a bit extra garlic and cilantro. I also added some cumin to give it some more kick. It was more tangy than I would have expected it to be. I feel like I still would need to change it to meet my tastes.
