Braised Balsamic Chicken
I followed the recipe exactly, but left out the thyme because I didn't have any. It was absolutely delicious and I don't think that sugar needed to be added to the sauce as others have suggested. I served this with seasoned rice (from a package) and veggie medley (frozen) and the combo was great. Next time I will either marinate the chicken in the vinegar, or cut the chicken into strips before cooking. The sauce did not penetrate the whole chicken breast, so it could have been more flavorful. I just now had the leftovers - cut the chicken into bite-sized pieces and let it soak up a lot of the sauce as I warmed it in the microwave. Delicious!

Southwestern Egg Rolls
We quadrupled this recipe for a large party. It was a hit, everyone loved it. We baked instead of fried. I used a can of diced green chiles instead of jalapenos, because I didn't have any. We made some with flour tortillas and some with egg roll wrappers. We liked the egg roll wrappers better. It was a bit of work to chop up and prepare the filling, but it's great that they can be assembled far in advance and kept in the freezer until ready to be cooked and served.

Twelve Minute Pasta Toss
I really enjoyed this recipe. I halved the ingredients and followed the recipe essentially as written. My sun-dried tomatoes were not packed in oil, so I used regular olive oil. I used whole wheat pasta and did not use the (optional) parmesan cheese. The dish was very flavorful and delicious. I am accustomed to more sauce with my pasta so it did seem a little dry. Next time I will follow other suggestions in these reviews and try adding some chicken broth for more liquid and maybe some spinach for nutritional value.
