Delicious Ham and Potato Soup

Best Bread Machine Bread

Best bread I've made in my machine EVER, hands down! Followed the recipe to the letter (and I did use canola oil, but it was mentioned in one of the two-star ratings not to use it, but no problem here!), and added nothing extra that was mentioned in the reviews...no problem! I've also had trouble in the past with my crust being too hard and thick, but not with this recipe...the crust was as good as the rest of the bread!

Rolled Buttercream Fondant

I was pretty leery about this recipe after The Great Marshmallow Fondant Failure (lol) and reading the negative reviews on this one. I was FLOORED at how well and easy this turned out to be!!! Tastes exactly like buttercream flavor, and by cutting the Crisco in half like some of the other posters did, I got that nice matte finish. I made a very small test batch because I was NOT going to waste all those ingredients again after the colossal failure of the marshmallow fondant! I am not ready to put it on a cake yet (was waiting until I found a recipe that worked!!) but I did a "test run" on the bottom of a round bowl and on a square butter dish, and had ONE area that had very faint cracks that could easily be fixed. And I didnt even need to use cornstarch like some others did. And this is my FIRST time making fondant! Totally deserves all five of its stars! :):):)

Marshmallow Fondant

So I guess I'm not the only one who has a ruined mixer now! I stopped long before it should have been too thick to mix, but it still stripped a gear. I mixed the rest by hand, and it was like many other reviewers said, that it was too sticky to work with no matter how much sugar etc you add to it. I got tired of messing with it. Too much trouble!

Baked Potato Soup

I agree with several other posters who say the soup was runny. I was expecting a MUCH creamier soup. I followed the recipe to the letter. My soup looked nothing like the photo - when I attempted to add cheese and bacon as garnish, they sank immediately to the bottom. I have left it on the stove on very low to try to thicken it, hoping the half and half wont curdle. Next time I may back off the chicken broth by a third and maybe even add an extra potato - I can hardly find any potatoes in my bowl! The taste, however, was excellent, which is why I gave it 3 stars. Could be a great soup with some tweaking.

Cajun Pork Chops

Definitely would make again! I had to make a couple of modifications - I didnt have either sage or cumin (which someone here mentioned as a substitute), which I omitted, and I didnt have any cayenne pepper so I doubled the Cajun spice mix; consequently, the pork chops were a bit milder heat-wise than a true Cajun flavor (I consider it hot if my lips go numb, lol). Someone posted that there was enough breading to coat more like 8 than 4 chops - I'm not sure if the recipe has been modified since this comment was made, but I had the perfect amount of breading for three good-sized bone-in chops...definitely not enough for 8! I also believe, like someone mentioned, that the oil amount was a typo. No way would that be enough oil to cook these. I also used almond flour in place of regular flour (husband is diabetic and this cuts back on the carbs). Great flavor! Hubs ate two! :)

Easy Fruit Cobbler

This recipe was excellent, and ridiculously easy to prepare! I made mine with fresh-picked wild blackberries from my own yard, and even used self-rising flour instead of all-purpose. Nice and crunchy on the top and edges and wonderful ooey-gooey in the middle. Try this one! Even a ten-year-old could make this one!

Crunchy Oven Fried Tilapia

Wonderful! Very crunchy and moist, and not greasy like fried fish. I love spicy food so I added some cajun seasoning as well as a few other spices. I'll be making it again this week!

Pumpkin Spice Muffins

Ohhh, I wish I could give this a better rating. I followed the instructions utterly to the letter and I was not impressed. The muffins had great texture and were very moist, but the "sweet" in the author's description did not apply to my muffins--it was as if I'd left the sugar entirely out. I wasnt expecting cupcake-sweet, but this was very very bland. They are pretty good with some peanut butter or (sweetened!) cream cheese, which ends up increasing the calories. I have some Funfetti icing in the fridge--I think I'll try that out! :) I'll enjoy the rest of these but I dont think I'll be making them again. Maybe my tastes are just different! :)

Pumpkin Roll Cake

This was WONDERFUL!!! I couldnt find my walnuts and it was great even without them. I even used Splenda in the cake part and neufchatel cheese in place of cream cheese and it was still great!!! One tip: dont use a terry cloth dish towel! I dont have any linen towels and I couldnt get enough powdered sugar on the towel, so it stuck a little, but it made the cake sticky (but still great!) Second time around I used a old pillowcase, which worked excellent, and the cake didnt crack this time either! I am SO glad this recipe was submitted! :)

Onion Soup Pork Chops

After reading the other reviews, I cut the water in half and used a boxed wild rice mix, without using the seasoning, just the onion soup mix. The pork chops were wonderful, and my husband liked them too. VERY easy to prepare!

Garlic Cheese Biscuits

Really good biscuits! I also added the garlic powder into the mix. I would definitely add more cheese next time. They were a bit drier than the restaurant biscuits but GOOD! :)

Oatmeal Chocolate Chip Cookies III

I dont have a clue what I did wrong with this recipe. Followed it practically to the letter. The cookies came out dry (but still relatively tasty). They practically fell apart when I took them off the cookie sheet. :o( I did give this 2 stars since the batter was really good by itself... :o)

A Southern Fried Chicken

This was SO great--better than I expected!!! Halved the recipe and cut that amount of milk in half (I used regular 1% milk instead of buttermilk). Used Heinz 57 for the steak sauce. SO crunchy and great taste! yumyumyumyumyumyum...
