Mexican Rice

This is a great one-pot meal that's fairly simple to make. I changed the amount of spice in the recipe, because we don't like really spicy food. I cut the chili powder, paprika, garlic powder, and black pepper in half, and it was still a bit spicy for my young kids. So...if you don't care for spicy food, you'll definitely want to tweak the spices.

These beans were very good! We ate them with rice as a main course. The only modification I made was to put 1/3 the amount of chili powder called for, since I don't like spicy food. It was still very tasty.

Slow Cooker Cranberry Roast

This was soooo easy to make and tasted great! I've never made gravy before, but this method was super-easy. We had ours with mashed potatoes, and it was really good. Even the kids kept asking for more. Thanks!

Black Bean and Corn Quesadillas

These were a nice change from our normal quesadilla recipe. I halved the amount of red pepper, since I don't like spicy food, but will add a bit more next time. Very tasty and the filling is good all by itself if you have leftovers!

Shepherd's Pie

This was very yummy and everybody wanted seconds. I made it exactly as the recipe stated, but will change a couple of things next time. Will add more veggies, since there was a lot of meat, and will at least double the potato topping. It was a bit skimpy. We really did enjoy this meal and will be making it again!

Pineapple Pork Chops

Not bad at all, but it could use a little tweaking to make it an awesome dish. The meat needed a little more cook time, about 15 minutes more. I was out of soy sauce and substituted worcestershire sauce, which moved it further into the realm of sweet, but it was still good. It needed something zippy, though: cayenne pepper or garlic next time.

Carla's Baked Bananas

This was very yummy! Next time I think I'll cut up the bananas so they get a bit softer. I'd also use brown sugar instead of white. My husband thinks it would taste better with a bit of rum extract. It was still very good, though.

Self-Filled Cupcakes I

These cupcakes were delicious! They were very easy to make and everyone at my son's birthday party loved them! Will definitely make again. I just plopped the cream cheese filling on top, instead of covering it with a second layer of cake batter, and they turned out fine. I would also say that the recipe yield is 24 cupcakes instead of twelve. Great recipe!

Luscious Slush Punch

I made this recipe for Christmas and it was a big hit. I would suggest starting to thaw the punch 30-45 minutes before you want to serve it. Very yummy!

This soup is superb! I'll never go back to canned minestrone again! To make it a bit simpler, I just added the cooked macaroni to the soup. I love all the vegetables in this soup.

Aunt Teen's Creamy Chocolate Fudge

This fudge was easy to make and very creamy. I followed someone else's suggestion and used 1 C. semi-sweet chips, 1 C. milk chocolate chips and 1 C. dark chocolate chips. It tasted great. Will definitely make again!

Vegan Split Pea Soup I

I cut this recipe in half because I have a smaller family. I would recommend checking the soup from time to time to make sure there's enough liquid. Mine ended up getting burnt on the bottom because there wasn't enough liquid. Otherwise it was good.

I am not a big fan of pumpkin pie, but this one was really good! It was so easy to make too! Next time, I think I'll try a 10" pie crust. I also garnished my pie with pecan halves.

White Chocolate and Cranberry Cookies

These cookies tasted great! I got many compliments on them. I cut down the white sugar to 1/4 C. as suggested by someone else and substituted vanilla for the brandy. My dough turned out quite crumbly though, and I had a hard time even getting the spoonfuls to stick together. Not sure what I did wrong, but they still tasted great!
