Irish Soda Bread

Really good! Other Soda Breads I've made tend to sit in your stomach like a rock, but this one wasn't like that at all. Made one batch w/ raisins and 1 w/out. Liked the raisin batch better.

Blueberry Lime Mold

This was even better than I thought it would be. I wasn't sure about the added sugar, but it was just right and made for a really nice combination of flavors. It was a big hit at the potluck I took it to & I only got a little bite of my dad's because it was already gone by the time I got to it.

Salmon Spread II

Made this for a friend's wedding reception and it was better than I expected. I probably used more salmon than it called for, and will use more in the future when I make it as a sandwich filling. I was worried when I first made it because it was kind of bland, but it was definitely better after setting in the fridge overnight.

Decadent Pumpkin Muffins

These were really yummy. I used 2 1/2 c. WW and 1 c. white flour and 3 whole eggs. I did some in a regular sized muffin pan with paper liners and some in a jumbo pan that I oiled. The paper ones stuck like crazy, but the non-paper ones came out of the pan beautifully. I know it may add a smidge to the fat, but it's worth it for me to not loose half the muffin to the liner.

Cranberry Turkey Salad

This was sooo good. I was a little leary at first, but took it to a potluck & was so glad I did. Everyone raved about it. It did take a little while for folks to figure out that it was a savory salad due to the gelatin topping, but it was fantastic. I did use cheddar instead of velveeta because we don't usually eat processed cheese.

Baked Zucchini

YUMMY! I'm sure it would be great as written, but I was looking for a main dish, so after reading other reviews I used 2 large zucchini and devided 1/2 lb browned ground beef seasoned w/ italian seasoning between each half. I was out of sour cream, so I sub'd cottage cheese & a little lemon juice in the cheese mixture and added a little oregano. I didn't have a pan big enough to boil the squash in, so I just put them in the oven w/ a little water in the pan while I was mixing up the filling & baked them for 20 mins. after adding the filling. My whole family loved these.
