Corn and Black Bean Salad

Good as written, but improved by the addition of a 1/2 onion (finely chopped). I also recommend using 2Tbsp lime juice in place of 2Tbsp of the vinegar - cilantro & lime were made for each other! :-) It is also delicious when served warm - 10min @ 350F in the oven (direct from the refrigerator) was perfect. Fennel with Rosemary, Shallots and Goat Cheese

Good, but needs some clarification. I used Moscato wine (dessert wine), which brought out a very unpleasant sour/pickled taste in the fennel - assuming this is my fault for not heeding "DRY white wine". Goat cheese and herbs go well with both the fennel and wine. Took off 1/2 star for not listing the size of the baking dish or explaining "arrange fennel". I used an 8x8 dish for 3 regular-size fennel bulbs (sliced) [I have never seen baby-size in any store]; the slices were layered like a gratin. Another 1/2 star off for the excessive liquid - the end result was submerged. I will make this again, but will try replacing the liquid with 1/2C of the water used from boiling (to increase the fennel taste) and 1/2C of Sauvignon Blanc.

Rich Chocolate Truffle Pie

So delicious that it borders on life changing. This recipe is that rare combination of easy preparation, divine taste, and potential for gorgeous presentation -- 5 stars all the way. Thank you Marbalet! I topped it with devonshire cream and sliced strawberries, and savored every bite even though I normally do not enjoy chocolate desserts.

Cheese Herb Bread

Delicious, but yields a very soft loaf - better suited for rolls I think. It rose well in my bread machine, but fell during baking and the end product is difficult to slice thinly (too soft). I made as written except for substituting a lesser amount of tarragon for the marjoram. Next time I would cut back on the total amount of spice because the bread takes center stage with so much spice.

Crazy Cake

I've made this twice (halved, in an 8x8 pan) and it is delightfully easy and tasty. My only complaint is that the center tends to sag. The second time, I replaced the water with mint-flavored milk (St. Patrick's day special) and added 3/4C chocolate chips to make a mint-chocolate chip cake (delicous - highly recommend!).

Layered Enchilada Bake

I rate this as 3.5 stars. The casserole structure makes this dish crowd-friendly, and it is an easy enough recipe for a beginner. However, I took off a half star because there was excess liquid after baking (the tortillas absorb it after refrigerating, but fresh from the oven it creates an unappetizing appearance). And 1 full star off because the Italian dressing gives an unpleasant tangy taste - it absolutely does not blend with the dish. I think the intent was to imitate the tanginess of lime (typical to Mexican cuisine) with a more common ingredient, but next time I will use 2 Tbsp fajita/taco seasoning with a squeeze of lime/lemon juice to replace the Italian dressing & chile pepper. Also recommend adding some sliced olives to the top layer.

Spinach and Strawberry Salad

The best salad I have ever eaten. It is so pleasing (tangy, hint of sweetness, complex nuttiness from the seed mixture) that I make it for the taste, not for the health benefits. (Never thought I would say that about any vegetable salad.). The lefover dressing is a great marinade for grapefruit slices.
