Lentil Soup with Lemon

very simple and quick, and absolutely delicious! The first time I made it I used yellow squash instead of carrots, and it was fantastic. Second time I followed the recipe *almost* and used carrots, and same great result! The second time I also doubled it, used 1.5 cups lentils, and added a couple potatoes, as I liked the recipe so much I decided to serve it to guests.

Irish Lamb Stew

Indian Salad

Very good overall! A couple changes: I left out the bell pepper, used fresh asparagus as others recommended, and used a mix of brown rice, black rice, and barley that I had on hand. Only downside was my fault: I served a gluten-free guest, and didn't realize the barley I added had gluten! Oops! I served it as a side to Masala Spiced Roast Chicken.

Masala-Spiced Roast Chicken

What a interesting idea! I left out the lime, as most people said it didn't add anything, made sure to rub the masala UNDER the skin, and stuck some pats of butter in there as well. It went great as a protein bonus for the meat eaters to a vegetarian Indian meal.

Swiss Chard with Garbanzo Beans and Fresh Tomatoes

This was yummy! I went ahead and used the whole lemon, (what was I gonna do with the other half?) and also added some fresh dill. Also I added about a quater cup of white wine to wilt the chard in. Easy!

Rhubarb Strawberry Crunch

As suggested by others, I halved the topping and baked it in a 9x9, and used only 1/2 cup sugar. I also added baking time because it looked so liquidy, but I'm not sure I needed to - it seemed to dry up (in a good way) as it cooled.
