I appreciate this recipe because of the recent changes I have made to my diet. Every now and then, I still want something sweet. So, I can have this and not feel too guilty. I substitute Splenda for sugar with no problems for fewer calories.
I made this again today (Jan 22, 2010) and made a few changes that really improved this. The first time I made this, I liked it, but it was a bit rubbery and dry. This time I added one more banana which made 1 1/2 cups mashed banana, and I added 1/2 cup applesauce instead of the 1/4 cup the recipe called for. I also had a leftover brown sugar/cinnamon mixture that I had used for something else which I sprinkled sparingly over the top which made for a yummy crust. My bread this time was moist and delicious with a perfect crust!
