This was so good! I used 8 fresh chicken breasts and cooked it for 6 hours. It was perfect.

Texas Ranch Potato Salad

Reviewed: Jul. 28, 2008
This recipe was easy to make and so delicious. It really did taste like a loaded baked potato! I did add 2 cups shredded cheddar cheese as was suggested by other people. The flavor of the dressing with the potates really sets this potato salad apart.

Acini di Pepe Salad

Reviewed: Aug. 4, 2008
This turned out great! I added strawberries and seedless red grapes instead of the cherries. I also only chilled the pasta/custard for 6 hours instead of overnight and it turned out fine.

Fruit Pizza I

Reviewed: Aug. 4, 2008
Yummy!!! I put red food coloring in the cream cheese mixture to make it pink - because it just seems to taste better when it is pink!

Easy Red Beans and Rice

Reviewed: Aug. 26, 2008
This was very easy to make and we loved the taste. I pureed the tomatoes in a blender because some family members don't like chunks of tomatoes. That is the only change I made. Great recipe. Thanks!

Honey Garlic Ribs

Reviewed: Sep. 2, 2008
this was such a great recipe. We all loved it! I didn't change any ingredients. I put it in a roaster that I had sprayed generously with "Pam". That was the only change I made. Clean up was easy and the ribs were delicious!

Glazed Lemon Bundt Cake

Reviewed: Sep. 2, 2008
This cake was wonderful. Just the right amount of lemon flavor. The only change I made was to add 1 teaspoon of lemon extract instead of the tablespoon of lemon peel because I didn't have lemon peel. If you like more lemon flavor, drizzle just a little bit of the glaze over each slice when you put it on a plate to serve. My only complaint was that it was a little dry the next day. We ate it warm about 1 hour after it was baked and the cake was dense and moist and turned out beautifully.

German Pancake with Buttermilk Sauce

Reviewed: Sep. 8, 2008
Everything about this was good! The pancake was a good base for the sauce - but didn't have much flavor on it's own. The sauce was basically a caramel sauce. I did cut down the sugar in the sauce to 1 cup like has been suggested and it was plenty sweet. My husband switched to maple syrup on his second piece because he felt it was too much like eating dessert for breakfast with the buttermilk sauce on it. I'm all for dessert any time of day, so it was great!

Black Bean and Corn Quesadillas

Reviewed: Sep. 8, 2008
These were fantastic! The only thing I did different than the recipe is put in 1/2 cup of Salsa instead of 1/4 cup. I started out with 1/4, but it got lost in the beans and corn. It had the right flavor for me by doubling it. I loved the brown sugar in it, and the tortillas cooked in butter topped it off perfectly.

Decorator Frosting

Reviewed: Oct. 28, 2008
This is a good tasting, easy recipe. I thinned it out a little with milk to frost a 9" X 26" cake and it was just enough. It went on fluffy and hardened just enough to stay put. It did get a little soft and hard to pipe, but nothing a few minutes in the fridge couldn't fix.

Pot Roast in Foil

Reviewed: Mar. 15, 2009
This flavor was fantastic! My roast was smaller than the recipe calls for, and so I kept a close eye on the time and still overcooked it slightly. The gravy made up for it though. I will make this many more times!

Easy and delicious. Very light. Hard to keep the last couple of pieces looking pretty when served though because the cake is so tall!

Mini Pineapple Upside-Down Cakes

Reviewed: Apr. 13, 2009
I thought this was so yummy! I made it into a bundt cake because I lacked supplies to make the mini cakes. My only problem was that, because I followed the recipe, the brown sugar mixture that I put into the bottom of the pan was a little too much and it disintegrated the cake a bit. It still tasted divine, but the presentation wasn't everything I had hoped. Easily fixable problem for next time!

Almost No Fat Banana Bread

Reviewed: Apr. 13, 2009
I appreciate this recipe because of the recent changes I have made to my diet. Every now and then, I still want something sweet. So, I can have this and not feel too guilty. I substitute Splenda for sugar with no problems for fewer calories. Post Edit: I made this again today (Jan 22, 2010) and made a few changes that really improved this. The first time I made this, I liked it, but it was a bit rubbery and dry. This time I added one more banana which made 1 1/2 cups mashed banana, and I added 1/2 cup applesauce instead of the 1/4 cup the recipe called for. I also had a leftover brown sugar/cinnamon mixture that I had used for something else which I sprinkled sparingly over the top which made for a yummy crust. My bread this time was moist and delicious with a perfect crust!

Foolproof Rib Roast

Reviewed: Dec. 28, 2009
I thought the flavor was wonderful, but my roast was overcooked. My roast was smaller - only 2 pounds. I cooked it according to the instructions and during the last 30 minutes, when I turned the oven back on, I watched the thermometer like a hawk. I pulled it out at 146 degrees. I suppose I should've cooked it for less time initially - something I'll try next time. However, that isn't the recipe's fault. So, I'm giving it 5 stars because the flavor really was wonderful and it was very simple to put together.
