Chocolate Trifle

Yum! This trifle turned out delicious and beautiful! I followed the suggestion of others and used 1/2 pint of whipping cream mixed with 3 Tbsp of sugar instead of the 8 oz cool whip. The chocolate mixture was thick and wonderful! I also used a peanut butter cup brownie mix and everyone kept asking what tasted so good in the brownies. I garnished with mini chocolate chips and Oreo crumbs I had left over from another dessert I was making.

Colleen's Slow Cooker Jambalaya

This Jambalaya was so good! I didn't have time to use my slow cooker, so I pre-cooked the chicken, shredded it, then threw everything in a stock pot. I left out the shrimp since I don't like seafood. Ours was very spicy and very good!!

Irresistible Pecan Pie

This pie was delicious and I'm just starting to like pecans. As others suggested, I added 1.5 tsp vanilla and 1 Tbsp flour to the batter. I baked in a deep dish pie plate on the 2nd to lowest shelf, but had to cover with foil in the last 10-15 minutes to avoid burning the top. Next time, I plan to bake at 325 instead of 350. I baked a chocolate pecan pie at 325 the same night and it came out perfect without having to cover it.

Anniversary Chicken I

Double Tomato Bruschetta

This bruschetta is very good! I don't always like bruschetta, but this recipe is very good. The oils taste great as well as the sun dried tomatoes. I like my mixture sit over night to really absorb the flavors. My guests said it was the best they had ever had!

Sugar Cookie Icing

This is very yummy icing and dries perfect! I had to add extra milk (1/2 tsp at a time) to get to right consistency. I had to make 2 batches of icing to cover the cookies initially.I also tried using both vanilla and almond extract - the vanilla tastes better (in my opinion). Be sure to add your food coloring while trying to get the right consistency of your icing - my red turned out too thin by the time I put enough drops in it. I also used a icing bag with piping tip to decorate (worked great). Be sure to allow plenty of time for icing to dry - may still be wet inside even though looks dry on outside! Cookies will smear otherwise.

Bada Bing Bada Banged Potatoes

My family loved this recipe! I made as directed, except I forgot thyme leaves. Next time I plan to cut the red pepper flakes to 1/2 tsp. The potatoes weren't spicy unless you bit into a piece that had a ton of seasoning on it... then it would set your mouth/esophagus on fire. These smell so delicious when baking as well! I also made about 4 lbs... still a TON of potatoes!

Chocolate Bourbon Pecan Pie

This pie was delicious!! I left out the bourbon since I made it for a church function. I also followed other reviewers' suggestion and added 2-3 oz chocolate chips as a bottom layer instead of inside the batter. It fit perfectly in a deep dish pie plate and baked beautifully on the 2nd to lowest rack without burning the top or bottom. Next time, I will make a homemade crust using the "Irresistible Pecan Pie" recipe since it is better than the frozen type. Can't wait to make again and try the bourbon version!

Chocolate Covered Strawberries

These were yummy! I inserted toothpicks in the strawberries and used a wooden spoon to either coat the strawberries in chocolate or roll the strawberry in the chocolate. When I tried dipping them while the chocolate was in the double boiler, the steam kept burning me and the strawberries kept falling off. It was much easier the other way. =)

Famous Butter Chicken

This recipe is Awesome!! Probably one of my new favorite chicken recipes and so easy to make! The one cup of cracker crumbs was just enough for 3 really large boneless chicken breasts. I also figured out is was easier to put the crumbs on a plate rather than in a bowl to dredge. I'm already looking forward to the leftovers tonight!!

Caramel Pie II

I make this pie all the time and everyone loves it! I use the fat free sweetened condensed milk and it tastes just as good! I also allow my cans to cool for 40 minutes on one side, then flip over for another 40 minutes. If not, there is a build-up of pressure and it's a pain to open the cans. I let the pie cool in the fridge for at least 8 hours, otherwise the caramel is not sweet. Be sure to add the cool whip after it has cooled b/c it will melt if the pie is still warm. I also garnish with mini chocolate chips.

Garlic Chicken

This recipe was very good!!! I was only making 2 chicken breasts, but still used the same amount of ingredients - I just poured the extra on top and really covered them thick with the bread crumb mixture. The chicken was so juicy and incredibly tender. I also added just a little more than 1/4 cup of Parmesan since I really like cheese. Next time I will probably try using Italian dry bread crumbs. Can't wait to make again!

Awesome and Easy Creamy Corn Casserole

Very good!! I followed the recipe exactly, and since I only had a 2 quart baking dish cooked for 50 minutes. The texture was very good (firmer on top, creamier in middle) and everyone loved it. Will definitely make again!

Kentucky Butter Cake

Creamy Peanut Butter Fudge

I didn't have time to read all the reviews, so I just followed the recipe exactly. I had my stove set on medium (5 of 10). After waiting 20+ minutes for it to boil, I decided to turn it up to 6 then almost to 7. It finally started boiling, so I reduced the heat back to 5. I stirred the entire time, 30+ minutes. I immediately added the other ingredients as directed then let it cool over night. I cut into it this morning... it was a little soft, but nothing that couldn't be firmed up in the fridge. I put it in the freezer for maybe 10 minutes then cut it up easily. I also attribute some of the softness to the horrific Alabama humidity. It tastes Amazing!!! The recipe also makes a ton! Very thick even using a 9x13.

Chocolate Mousse Pie

This pie was very good! I used some 1 tsp amaretto in place of 1 tsp of the water (in the chocolate mixture) for an extra almond flavor. I also made a homemade Oreo crust to go with it.

Cake Balls

Although time consuming, these are very good! I followed the suggestions of the top reviewer with the exception of the toothpicks (which didn't work out so well). Making the balls that way is an all day project. Using a hand mixer on low for about 20-30 seconds definitely helps mixing the cake and frosting. The only problem I had was my melted chocolate bark not staying smooth long enough to coat all 56 balls. I tried adding a few squares at a time and managed to get 40 done. I also ended up using 9 of 12 squares of bark. The recipe calls for 3 oz, which would cover like 5 balls. I also used devil's food cake mix and whipped buttercream frosting - delicious!!

Honey Bun Cake I

This cake is AMAZING!!! It is now my new favorite cake. So good and so irresistible! I baked mine in a bundt pan for 45 minutes. I also added some of the cinnamon/sugar mixture in the pan before pouring the batter. When using a bundt pan, you can half the icing recipe. I poured a majority of the excess in the middle whole, but it was still a ton. Everyone loved this cake!! It definitely tastes like a mixture of honey bun and cinnamon roll! YUM!!
