Bran Flax Muffins

Made the following changes/substitutions: -Upped the shredded carrots to 2 1/2 cups -Added more vanilla -1/4 cup brown sugar, 1/4 cup honey, 1/4 cup molasses (instead of all brown sugar) -Substituted 1/2 the milk for greek yogurt

Pudding Shots

A huge hit at our office Christmas party!! I tripled the recipe. With about 35 people at the party, not a single pudding shot remained. I recommend topping them with a dollop of whipped cream just before serving.

Cheesy Amish Breakfast Casserole

Oh my gosh. Look no further for the BEST egg casserole dish out there! Easy to prepare, simple ingredents, amazing flavor. My husband requested this for Christmas morning breakfast. Great dish.

Fig and Lemon Chicken

Mine was WAY too lemon-y. I either used massive lemons which resulted in too much juice, or used extremely potent lemons! Next time I would use less lemon and add lots of honey to the sauce!

Chicken Noodle Soup

Beef and Irish Stout Stew

My husband was obsessed with Guinness beef stew in Dublin, so I was excited to try out this recipe when we got home. It came close to the "real thing," but seemed to be lacking something...I'm just not sure what?! I recommend letting the stew cook without a lid for the last hour before you serve it so it has a chance to thicken up a bit.

Linguine with Peppers and Sausage

I used bow tie pasta and it was delish! Added a table spoon of butter to the sauce, some S & P, and a teaspoon of crushed red pepper flakes. Will make this again soon!

Chicken Enchiladas V

Not sure I will make this again. It was too creamy and not enough "punch" of Mexican flavor. If I do here's what I would change: use 1/2 cup onion instead of 1 cup. 2 teaspoons chili powder and/or a package of taco seasoning. Use 1/2 can condensed soup instead of a whole can.

Mulligatawny Soup I

This soup is filling, easy to make, and full of flavor. I added 1/8 cup raisins, 2 cups of water, and omitted the heavy cream. Absolutely delicious.

Slow Cooker Lentil and Ham Soup

I used Italian sausage instead of ham. Took casings off, browned it for color and flavor, then threw it into the crock-pot. It was delish! My vegetable-hating husband even liked it and has asked for it again.

Chocolate Chip Coffee Cake

ABSOLUTE BEST COFFEE CAKE. You have to try this. I made mine in a bundt pan and it worked really well. I added 1/4 cup brown sugar to the "topping," sprinkled half of it on the bottom of the bundt, poured half the batter in, then sprinkled the remaining topping on, and the remaining batter. I agree with other reviewers: beat sugar, butter, and cream cheese until light and fluffy for a light and fluffy cake!

Chewy Peanut Butter Chocolate Chip Cookies

These turned out really well. I only used 1 egg, and added 1 extra tablespoon of water. Worked just fine. I also used peanut butter chips instead of chocolate chips and there were delish! Try this recipe if you're looking for a solid peanut butter cookie recipe to add to your repertoire.

Bread Machine Bagels

My husband went crazy for these! It was my first time making bagels, and it was so much fun! I made 3 with poppy seeds on top, 3 with cinnamon/sugar, and 3 with onion soup mix (mostly the dehydrated onions). Try this recipe!

Ultimate Irresistible Granola

Yummy yummy! I substituted almonds and pecans for some peanuts, and extra walnuts. Turned out great. I added a little vanilla extract, and will add some cinnamon next time. Fantastic on yogurt!

Broiled Tilapia Parmesan

It's really good. Try it!! You can't go wrong with the ingredients either. A little more of one thing, a little less of another. I didn't have onion powder or celery salt, but it still turned out great. EASY, FAST, HEALTHY.

Pumpkin Pancakes

I tried to do 1/2 wheat flour, 1/2 white. Big mistake. The wheat flour overpowered the pumpkin way too much. I will try 3/4 white, 1/4 wheat next time. This recipe made big, fluffy, thick pancakes. Great texture.
