Slow Cooker Lemon Garlic Chicken II

Reviewed: Feb. 1, 2008
THis turned out surprisingly good!!! I used two boneless skinless breasts, (1lb) and I did everything by the recipe except used more garlic as we LOVE garlic...I used the already minced garlic...I also took everyone elses advice & used chicken broth instead of water...I made enough to cover chicken so it did not dry out...I also cooked this for about 4 1/2 hours on low.....I took juice out of crockpot, added cornstarch to thicken it up & made a yummy gravy! returned gravy & chicken to crockpot & left on warm..chicken fell apart & soaked in so much flavor it was unreal! I served w/Uncle Ben's whole grain brown rice w/garlic flavors & steamed broccoli & cauliflower & it was sensational! My fiance is NOT a big chicken eater & he ate every bite of his & complimented the flavor! Will definitely make again...I def. agree that making sure the breasts are covered in liquid is key..also, my chicken breast were kind of thick & so I think this helped it not to dry out! Sooo yummy!

Italian Spaghetti Sauce with Meatballs

Reviewed: Oct. 8, 2007
I have made this twice & yum, yum, yum!! It is pretty easy to make & it tastes like it takes a lot longer. I use a lot more garlic cloves & onion only because we love them both! I also use a 28 oz can of crushed or diced tomatoes instead of the whole ones & use a big 28 oz of tomato sauce. I put extra garlic & pepper in the meatballs too, along with 1/2 c milk. I do let the sauce simmer longer than 30 min with the meatballs, just to be safe! But my two teen stepsons who are picky as picky can come, LOVED it & said they had never eaten any spaghetti & meatballs so good! My husband raved over it also which is rare because normally he just says, "oh that was good, thank you" I made it again last night & my brother was over for dinner & he cleaned his plate & took some home after saying yum it was! Great recipe with few modifications.

Sour Cream Pork Chops

Reviewed: Sep. 21, 2007
This was an awesome meal!!! Very moist & tasty. I followed it pretty closely, but did add extra seasonings to the flour & chops before browning. Let it cook on low all day & I made some wide egg noodles & put those in the sauce, then put the chops on top of the noodles. My fiance who is soooooo picky & always leery when I try something new, loved this!! He said it was GREAT!! The chops were soooooo moist, yummy!

Ground Beef Enchiladas

Reviewed: Jul. 18, 2007
A++++ Awesome recipe!! I did alter a few things based on previous reviews & threw my own in as well & this turned out soooooo unexpectedly wonderful! I browned hamburger meat with reg yellow onions, not green, added in a few old el paso sliced green peppers & cooked that all up. Added in taco seasoning & water & let that cook till water absorbed. I used flour tortillas instead of corn & sour cream instead of yogurt. I did not have shredded mozzarrella, so in the soup mixture I used about 1 1/2 cups mexican shredded cheese. I did have slices of mozzarrella, so I laid a slice of moz on each tortilla, then scooped the hamburger mix, & the soup mix. I only had a little of the soup mix left, so I just spread it out then over the tortillas. I let these bake until the tops were a light golden brown. I sprinkled more mexican cheese over top & cooked until it melted down. I diced up some tomato & sprinkled over the top once I pulled out of oven & these were wonderfully crisp on the outside, nice & gooey on the inside. A great flavor! I wish I would have had some black olives & green onions also to sprinkle over the top, but this was a hit with myself & my fiance'!!! Great recipe. (I served w/refried beans & mexican rice)

Crispy Baked Chicken

Reviewed: Jul. 15, 2007
I have made this several times & it is yummy every single time! The only thing I change is I add in garlic powder & also I made it once with chicken thighs & it turned out greasy. The other times I made it with drumsticks & leg quarters & both times, it turned out soo crunchy & yummy. It was better than going to a KFC or Popeyes chicken place. Extremely happy with this recipe!

Bratwurst Potato Skillet

Reviewed: Jul. 15, 2007
I liked this recipe, although for some reason, mine got soggy. I think this recipe maybe called for too much oil & I did have to make a few changes due to using what I had on hand, so that may have been why soggy. I used extra virgin olive oil & had to use the hillshire farm cheddarwurst brats (maybe the cheese in them made greasy) I sub apple juice for the orange juice & did not have soy sauce, so used A1 New York style marinade instead. Still tasted great & I can't really rate it a 4 because I did not follow the recipe as written, so my changes may have caused the issues I had since the other reviews were all good. I will make this again in the future trying the original recipe!

DeeAnn's Cheesy Bacon Cabbage

Reviewed: Jul. 15, 2007
This was good, but a little too greasy for me. I even used less of the bacon grease than the recipe called for...I did add onion & it made it really good. I also used maple bacon (all I had) & that added a nice sweet taste to it. Cheddar cheese was a nice topping! I will make again, just less bacon grease...

Easy, Cheesy Zucchini Bake

Reviewed: Jul. 12, 2007
This was good, will make again. I pretty much followed recipe, but based on others having problems with zuchinni, I melted a little butter & sauteed the zuchinni until the started to brown slightly. I browned the turkey in the same pan I sauteed the zuchinni in & also added some chopped onions & garlic. I mixed in 2 cups of ragu spaghetti sauce w/mushrooms & green peppers & a can of corn & poured over the zuchinni! Covered & baked for about 30 minutes, removed foil, let cook another 10 minutes to thicken it up a little more & then put some freshly shredded cheddar cheese over the top, cooked until bubbly. I served it over wild rice (uncle ben's) & made garlic bread to go with it. My fiance liked it & said he'd take some to work today for lunch..(he is picky & will not take leftovers if he thought the meal was just ok) Nice change from hamburger meat & chicken & pork!

Eve's Chicken Quarters

Reviewed: May 31, 2007
This turned out much better than it sounded...with a few changes....I used Rice A Roni broccoli au gratin rice since that was all I had...I sprinkled the leg quarters with garlic powder & pepper & I used only 1 cup water....omitted broccoli since I did not have any on hand....I did let it bake for an hour & 15 minutes after I added the rice because it still seemed liquidy...once I pulled it out of oven the rice absorbed most of the rest of the liquid... Chicken was crispy outside, juicy inside & rice mixture tasted soooo good!!!

Weeknight Chicken Cordon Bleu

Reviewed: Dec. 19, 2006
This was a very quick & easy & yummy dish. I followed all instructions pretty much to a tee, but used no salt, used thick cut sweet ham from the deli, used reduced fat cream of chicken. I had to cook quite a bit longer than 15 minutes, I would estimate I cooked it about 45 minutes. It was very moist on the inside & the outside breading was wonderful! The cheese melted a little out, but not much. I did use swiss & monterrey jack & it tasted great. My fiancee kept telling me how good it was. As a side, I made plain white rice & chopped broccoli seperately & when they were both finished, I combined them, added some pepper & butter & scooped some of the sauce from the chicken dish into rice. It was soooo good.

Scalloped Potatoes and Pork Chops

Reviewed: Nov. 17, 2006
Absolutely wonderful. I scaled it back to 3 servings & also took others advice about microwaving the potatoes 1st, I did it for about 5 minutes. I also left the peel on & sliced them that way. I took another persons advice & mixed the potatoes, cheese & onions in a bowl, put them on the bottom, poured milk over top and put pats of butter in as well. Then placed the chops over all that. I also poured a little bit of milk over the chops. Halfway through, I pulled the chops off, stirred the potatoes & put the chops back on making sure I flipped them. I used a lot of pepper (I am not a big salt fan). I also noticed it a little "watery" after the hour, so I left them in there a bit longer & took some of the juices and put over the chops. I think I may have used a little too much butter, but my fiancee who is SOOOOOOOOO picky about food, really enjoyed this. He voluntarily said, "This is something you can make again, this is really good"
