Snow on the Mountain Green Beans

We really liked these. The only addition I made was to throw some sliced almonds in the pan with the green beans. And make sure the feta is finely crumbled; otherwise big chunks overwhelm the tastiness of the green beans.

Classic Peanut Butter Cookies

I added 1/4 cup additional peanut butter yet the peanut butter taste seems too mild to me and the hubby. But still good...he ate 3 in a row!

Chicken Pot Pie I

My husband ate 1/2 the pot pie himself! I made it exactly according to original instructions except for adding a few spices to the filling (per contributor Jaden: "Also I added 1/2 teaspoon each of pepper, thyme and tarragon, and 1/4 teaspoon of garlic powder to the entire mixture."). These spices made it very savory and yummy. I am fairly certain it would have been a bit bland without them. I let the pot pie sit for about 5-10 minutes after removing from the oven and the filling was just right, not dry or runny. An easy, tasty recipe I will certainly make again.

Beef and Biscuit

Husband and I agree...good colder weather dish. We don't care for spicy so used only 1 tsp chili powder and a red bell pepper in place of hot pepper. Cold up some other spices to compensate but still a good, hearty dish.

Quinoa and Black Beans

Use just 1 can of black beans. Dried basil worked well in place of cilantro - just sprinkle a couple of teaspoons into the recipe.

Simple Golabki

Hubby gave it a 5...had 2 huge servings to prove it! He said it's the best version of unstuffed cabbage I have ever made. I did cut the salt to just 2 tsp, added paprika and parsley, as another reviewer suggested. I only had a 14.4 oz can of diced tomatoes so used an 8 oz can of tomato sauce with it. Also let it simmer 20 minutes. Made some long grain white rice separately in my rice cooker (love that thing) and served everything over top of the rice.

Balsamic-Glazed Salmon Fillets

Husband said give it a five so here it is. I cut a 2 lb salmon steak into 4 serving pieces. Baked closer to 14 minutes since they were still a bit frozen in the center. Other than that didn't change a thing. Came out perfectly.

Honey Roasted Red Potatoes

Husband said give it a five so here it is. I would use foil under the potatoes and also mix them up once during the cooking or coat them in a bowl before you put them on the pan.

Broccoli Chicken Casserole I

Baked French Toast

Although this was tasty, it was not French toast to me. This is bread pudding – even with the reduced liquid. I am not a big fan of mushy so I will stick with regular French toast.

Chicken Cordon Bleu II

Husband and guests loved this recipe. Next time I would use smaller chicken breasts and pound them a little thinner. I would also definitely go with tying them closed rather than trying to use toothpicks (which were not very effective after pounding the meat). Other than that just follow the recipe exactly and you will be sure to hear plenty of compliments thereafter!

Roast Leg of Lamb with Rosemary

4.5 per Lebanese husband who loves lamb. :) Saw later that others had added balsamic vinegar to the marinade so poured a splash over the lamb part way through roasting; I think this gave the sauce too much bitterness. So make sure you add it during marinating or not at all.

Steel-Cut Oatmeal

My husband ate 3 of the 4 servings he liked it so well. He actually makes a granola with a lot of the same ingredients. I was skeptical of adding the cashews and almost left them out but they added a surprisingly good taste to the oatmeal. Followed the original recipe except started with 4 cups of liquid (3 water and 1 vanilla almond milk). Hearty and yummy!
