Pork Chops with Apple Curry Sauce

So good & different! I didn't have any bouillon, so added a bit more salt. I didn't read the review to reduce the sauce (less juice), but I used 6 chops and it was too much. Maybe I'll also add some cornstarch to thicken it up a bit. Definitely good with rice (of any kind). Also, agree, get some good curry powder, or make up your own. Thanks for such an excellent recipe.

Pastry Cream

I made it dairy-free too using soy milk & milk-free margarine (probably better if I had used part butter-flavor crisco & vanilla flavored soy milk). I did think it needed a tad more sugar and a tad more vanilla, but was a great filling for the napoleons I made. It is a must to whisk/stir constantly. I didn't need even a sieve to get out the lumps. Thanks for the versatile recipe.

Squash Casserole I

It was great to find a tasty squash recipe that was milk-free. I don't think my changes are too much, so I'm submitting my review. I used a small onion and added some paprika & garlic. Like another reviewer, I sauteed my squash & onions. It didn't need the extra draining like other reviewers. I used cornbread as a topping, to make it gluten-free. Thanks for the recipe.

Key Lime Pie VI

My husband's 1st words were, "MMM, not too sweet, just right." I concur. I made by the recipe, using a graham cracker crust. I didn't have key limes, & used regular. My lemon meringue recipe calls for adding the lemon juice after removing from heat, too, I'm not sure why, but it works fine for me. Just be patient and let the mixture thicken well before removing from heat. It was going to be awhile (maybe 2 hrs?) before I made the meringue, so I put the whites in the refrigerator, letting the other cool in saucepan, just stirring occasionally. When I made the meringue, I didn't wait for the whites to return to room temp. and it came out marvelous. Will try that again. Thanks for the excellent recipe.

Coconut Chocolate Dream Pie

I've been through several tofu pie recipes & this rates tops with me. Due to some allergy/diet issues, I did make some changes that I believe don't alter it enough to declare it another recipe. I've used homemade pie crusts (an oat one and rice chex one & sometimes none). Also, I used a subst. for the choc. chips (milk allergy) -- cocoa, marg., soy milk & sugar. Didn't have rice milk, used soy milk. I did have to sweeten it with a little stevia. I've also made it and added a sliced banana on crust before adding tofu mixture. Not only do my diabetic family members love it, but I've impressed others with a "good for you" chocolate pie!

Coconut Blueberry Cake

My sister said this is a keeper, and I couldn't agree more. An excellent combo of flavors! I used frozen blueberries which I mixed with about a TB of flour before adding to mix and putting some on top. I did add maybe 2 Tb lemon to the cake mix (deducting a little milk--I used soy milk). Sorta makes it a buttermilk subst, so maybe should use lemon extract for lemon flavor in the cake. It made a bit more glaze than I needed, but no problem finding uses for the leftover!. Cake was still warm, so I poked holes in the cake & drizzled glaze on top. Still couldn't wait for it to cool to cut & eat. Thanks so much for this recipe.

Smushed Apples and Sweet Potatoes

Excellent recipe! Now I understand the rave reviews! I was planning to make a casserole with my leftover baked potatoes, but this was much better. Did not need the milk, used brown sugar & only about 2 Tb., did add some toasted coconut for topping. I just used a fork to combined, liked the bits of apple & potato. Will definitely make again & again. Might try throwing in some quick-cooking oatmeal before mixing, too. Thanks for this recipe!

Low-Fat Brownies

I had a little sweetened condensed (soy) milk leftover & came across this recipe. I reduced the recipe to accommodate the milk, replaced the egg substitute with mashed bananas, and baked in my toaster oven. It was delicious! I know I changed the recipe slightly, but don't think it was enough to alter it into a different recipe. I will be making this one again.

Easy Microwave Chocolate Cake

I'm rating this a 5 because it met all my expectations. I didn't expect it to taste as good as my cakes baked in the oven. I did add a little bit more sugar and less cocoa as advised. Next time I'll not lessen the cocoa. Thinking I might try leaving the cocoa out sometime and adding lemon juice (reducing the milk a little). It's just great when you need an emergency dessert, Serve with some strawberries or peaches, yum.

Spinach Salad With Berries and Curry Dressing

At first I turned my nose up at this recipe. Couldn't imagine the flavors working together, but willing to try a new recipe. I was very pleasantly surprised. It's so great, too, you can use whatever berries/fruit you have on hand. The curry & mustard add just the right amount of spicy to the salad. You'll never miss the oil.

Quinoa and Black Beans

I've recently discovered quinoa & black beans (beans make great brownies) so happy to find recipe combining the 2. Only used one can of beans as others suggested. Added a little lemon juice, didn't use cilantra, but the flavors and the spice amounts were just perfect. I'll be making again, and sometimes altering to add zucchini and maybe tomatoes, too. Thanks for the recipe.

BBQ Tuna Fritters

When I was a kid we ate a dish of tuna, egg and soda crackers all scrambled together. I'd put ketchup on mine. Alas, my husband just couldn't like it. Well, Tee Hee, it's basically tuna and egg with the oats subst. for crackers. He even eats them leftover straight out of the fridge. I do add the green onion and a little garlic, too. It's tasty with most any sauce. Such a great quick dish to make, too.

Carrot Burgers

These were great. I was just looking for something different to do with carrots instead of a veggie burger. I used coconut oil and green onions and added some garlic as suggested. I'll enjoy subst. different cereals, change the spicing some--have lots of fun making and eating from this recipe!

Burnt Sugar Cake II

Yummy, Yummy! I wanted to make a Burnt Sugar Cake for my birthday just like my Mom made for me. Only she used a yellow cake with the burnt sugar frosting. That frosting takes more to beat it than I can do, so I was excited when I stumbled onto this recipe. I made it using a milk-free margarine and soy milk (allergies) and put a chocolate frosting with pecans on it. Now I'll make it for my Mom's birthday. And maybe break down and make the brunt sugar frosting, too.

Oatmeal Whole Wheat Quick Bread

Wonderful bread,esp. when you don't have time for a yeast bread. The first time I made it I ate about half of it before it even cooled. It is a tasty bread to make when you really don't want rolls. Goes with a meal very nicely, even tomato soup. This recipe is one of my favorites.

Whole Wheat Beer Bread

This bread was gone almost before it was completely cooled. We had some leftover Bud Lite and I found a great way to make use of it. It was very easy to make, too. I didn't think it tasted to "beery", if it did, I wouldn't like it. Next time I'll try with just the whole wheat.

This was so very tasty and a great way to make our leftover boiled shrimp go further. I didn't follow the recipe exactly, because of what I had on hand. I used roasted red peppers and green onions instead of the bell pepper and onions. I also added a little celery just because I had some. I'll be making this again.

Pineapple Crisp

I have a hard time leaving well enough alone -- following a recipe as it's written. However, I did this time and was very pleased with the results! Quite tasty. I really like the crust on the bottom and top. Of course, next time tho, I may have to experiment and subst. some oatmeal for part of the flour. I was thinking too, it might be good to add some sliced bananas between the pineapple mix and the top crust and maybe call it a Pina colada crisp.
