Porcini Pork Tenderloin

After trying two other recipes from this submitter, I figured why not do this one as well? Came out great! Other two recipes were Asian (Sesame Crusted Mahimahi) and Moroccan (Moroccan Sea Bass Ceviche) in flavor and now this one is French. This person has a very wide range of cooking talent with different cuisines.

Pan Roasted Pork Tenderloin with a Blue Cheese and Olive Stuffing

Pancetta Wrapped Shrimp with Chipotle Vinaigrette and Cilantro Oil

This was really good. The flavors from the pancetta, shrimp, chipotle, cilantro went very well together. To Joe Blue, not only did you butcher the spelling of "cilantro", OF COURSE it was oily. It's a cilantro OIL.

Moroccan Spiced Sea Bass Ceviche

Unbelievable flavors in this dish. I used this for one of my culinary school classes and everyone was blown away. I didn't have the preserved lemon so I used lemon zest and crushed anise seed instead and it came out good. I'll try this with the preserved lemon if I can find it or if I have the time to make it at home.

Sesame Crusted Mahi Mahi with Soy Shiso Ginger Butter Sauce

Very good recipe. I used it with tuna because I couldn't get fresh mahi and it was very tasty. Make sure you season the fish with salt and that will bring out more of the sesame flavor from the seeds. I could not find shiso so I used thai basil and it came out very good. I'll try the shiso if I can find it.

Spicy Lime-Cilantro Marinated Flank Steak

Very, very vibrant and fresh flavors. I served this with a saffron rice pilaf and everyone was spooning more of the marinade to mix and eat with their rice.

Garam Masala Seared Salmon with Coconut-Curry Butter

Great recipe with lots of flavor. I followed the recipe and I used Thai Kitchen brand Premium coconut milk which maybe made the difference. Not sure what brand of coconut milk others used but the sauce I made had a nice flavor.

Tenderloin with Spicy Gorgonzola-Pine Nut-Herb Butter

Great recipe. The butter has lots of flavor. I made a good amount of butter and also used it on veal chops and pork loin chops and both of those dishes came out very good as well.

Ginger-Scallion Crusted Salmon

I didn't make the cucumber salad but the salmon and sauce was really well. You can buy bottled ponzu in the Asian section of most supermarkets or make your own (basically soy sauce and citrus). To the other reviewer: why would you rate a recipe without even trying it?
